Ingredients
  • 4 Medjool dates pitted
  • 1 cup almond butter
  • 1/2 teaspoon cinnamon
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/4 cup shredded coconut unsweetened
Servings: 1 ball (approx. 2 tablespoons)

Instructions
  1. In food processor with S blade attachment, add pitted dates and process until they form a paste.
  2. Add the almond butter and cinnamon process until combined.
  3. Add the cranberries, pecans, and ¼ cup coconut and pulse until combined.
  4. Remove blade from food processor, scoop out dough into 2 tablespoon portions and roll into balls.
  5. Refrigerate 30 minutes to set.
  6. Enjoy!

  • 1 pound brussels sprouts sliced
  • 2 cups cooked quinoa cooled
  • 1 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts
  • 2 tablespoons agave
  • 1 fresh squeezed orange
  • 1 tablespoons extra virgin olive oil
  • 1/8 tsp salt
  • 1/8 tsp pepper

  1. Clean prep area, wash hands, and wash produce.
  2. Slice brussels sprouts
  3. Whisk together dressing ingredients: agave, fresh squeezed orange juice, olive oil, salt, and pepper; set aside
  4. Toss together brussels sprouts, quinoa, dried cranberries, chopped pecans, and dressing.

Ingredients
  • 1.5 cup all-purpose flour
  • 1 cup oats
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cup apple chopped
  • 1/2 cup chopped pecans

  1. Preheat oven to 350, clean area, and wash apples
  2. In a small bowl, combine, flour, oats, cinnamon, baking soda, and salt. Set aside.
  3. In a mixing bowl, mix with an electric mixer butter, sugar, brown sugar, egg, and vanilla until smooth.
  4. Slowly mix in flour mixture until smooth
  5. Fold in apple and pecans
  6. Form the dough into 1” balls, place on cookie sheet, and press down.
  7. Bake at 350 for 6-8 minutes
  8. Remove from oven and serve warm for that yummy warm fall feeling

  • 6 cups fresh baby spinach
  • 4 Kiwi fruit peeled, cubed
  • 1 cup mandarin oranges canned in juice, drained
  • 1 cup pecans chopped
  • 2 tablespoon nonfat vanilla, Greek yogurt
  • 2 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoon honey
  • 1 teaspoon Poppy seeds

  1. Wash your hands and clean your preparation area.
  2. Wash kiwi fruit with a soft bristle brush and rinse and dry spinach in a colander.
  3. Place spinach in a large serving bowl. Add kiwis, mandarin oranges, and pecans evenly on top of spinach.
  4. In a bowl or jar with a lid add the yogurt, lemon juice, olive oil, honey and poppy seeds.
  5. Whisk or shake dressing mixture until well combined.
  6. Pour over the spinach and fruit.
  7. Serve immediately.
