Ingredients
  • For the Marinade:
  • 1/4 cup orange juice
  • 1 teaspoon low sodium soy sauce
  • 1 tablespoon lemon juice
  • 1 clove garlic grated
  • 1 teaspoon ginger grated
  • 1 teaspoon olive oil
  • 10 ounces skinless tilapia fillets
  • Slaw
  • 1/2 cup red pepper sliced very thinly
  • 2 scallions chopped
  • 1 small small jalapeño sliced very thinly (or less to taste)
  • 1/2 medium medium cucumber chopped into matchsticks
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon honey
  • 1 teaspoon toasted sesame oil
  • 1/8 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

  1. Prepare the Marinade:
  2. In a shallow dish, combine all ingredients through the olive oil. Add fillets (covering both sides) and refrigerate at least 30 minutes.
  3. Prepare the Slaw:
  4. Combine all ingredients. Refrigerate at least 1 hour before serving (the longer it marinates, the spicier it gets).
  5. For Cooking:
  6. Heat skillet to medium high. Add fish to skillet. Cook 3-4 minutes on each side.
  7. Plate the tilapia and top with the red pepper and scallion slaw.

Ingredients
  • 1/2 pound extra lean ground beef
  • 4 ounces sliced brown mushrooms
  • 1/2 cup white onion chopped
  • 2 cloves garlic minced
  • 1 large russet potato thinly sliced
  • 10.5 ounces fat-free cream of mushroom soup
  • 1/3 cup skim milk
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 cup reduced fat cheddar cheese shredded

  1. Preheat the oven to 350 Degrees F.
  2. In a skillet over medium high heat, saute the ground beef, mushrooms, onions, and garlic. Once the beef is browned and vegetables are soft, set aside.
  3. Slice the potatoes thinly and set aside,
  4. Mix the soup, milk, pepper, salt, and paprika in a bowl.
  5. In a loaf pan, spray with canola oil, and arrange half of the potato slices in the bottom of the pan.
  6. Spread half of the soup mixture on top of the potatoes then place the beef mixture on top. Layer the remaining potato slices and soup on top.
  7. Cover and bake in the oven for 45 minutes. Remove the cover, top with cheese, and bake for an additional 25 minutes. Remove from the oven and let set for 5-10 minutes to firm up before serving.

Ingredients
  • 3/4 pound center cut loin pork chops about 2 chops
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 teaspoons olive oil
  • 1/4 cup sugar free peach preserves
  • 1 Tablespoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1/8 teaspoon paprika

  1. Season pork chops with salt and pepper.
  2. Heat olive oil in a non-stick skillet over medium-high heat.
  3. Fry pork chops for 4-5 minutes per side or until just under internal temp of 145 degrees F.
  4. In a small bowl combine peach preserves, apple cider vinegar, minced garlic and paprika.
  5. Remove pork chops from skillet and set aside.
  6. Reduce heat to medium then pour peach mixture into skillet and stir to heat.
  7. Return pork chops to skillet and cook 1 minute per side until they are glazed.
  8. Serve hot with extra peach glaze on top.

Ingredients
  • 1 cup nonfat vanilla greek yogurt
  • 1 tablespoon cheesecake pudding mix instant, fat free, sugar free
  • 1/2 cup whipped topping sugar free
  • 2 teaspoon honey
  • 1 teaspoon corn starch
  • 1/4 cup water
  • 1/2 cup cherries frozen, thawed
  • 1/2 teaspoon vanilla extract

  1. In a small bowl mix the corn starch and water together and set aside.
  2. In a small pot add the cherries, honey and cornstarch mix.
  3. On medium low heat heat the mixture until thick and bubbly.
  4. Use a potato masher to mash the cherries while cooking. Add vanilla extract and mix.
  5. Pour into another bowl, cover and set in the refrigerator to cool.
  6. In a medium mix bowl mix together the yogurt, pudding mix and whipped topping.
  7. Divide mixture evenly into two small bowls and cover and set in the refrigerator for 30 minutes to set-up.
  8. Divide cherry topping evenly between the yogurt mixture and enjoy

  • 2.6 ounces vacuum pouch chicken breast
  • 1 stalk celery chopped
  • 1/3 cup plain nonfat Greek yogurt
  • 1/3 cup dill pickles chopped
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon dried dill
  • 2 slices whole grain bread toasted if desired

  2. Chop the celery stalk and pickles to desired size and add to the chicken mixture.
