Ingredients
Dressing
  • 3/4 cup nonfat plain Greek yogurt
  • 1/4 cup mayonnaise with olive oil, reduced fat
  • 3 Tablespoons honey
  • 2 tablespoons apple cider vinegar
Coleslaw Mix
  • 1 small green cabbage, shredded makes around 7 cups shredded
  • 1 1/2 cups carrots, shredded
  • 2 medium apples sliced
  • 1/2 cup green onions sliced
  • 1/2 cup dried cranberries no sugar added

Instructions
  1. Wash hands and clean preparation area.
  2. Rinse all produce before shredding.
  3. In a mixing bowl, whisk together the yogurt, mayonnaise, honey, and vinegar until smooth.
  4. In a separate large bowl, toss together the shredded cabbage, carrots, apples, green onions, and cranberries.
  5. Pour dressing over cabbage mixture and toss to coat.
  6. Serve with your favorite main dish!
  7. Be sure to refrigerate coleslaw if not serving immediately.

Ingredients
  • 20 ounce crushed pineapple in juice
  • 8 ounce fat-free whipped topping frozen
  • 1 ounce package instant pistachio pudding mix sugar and fat free mix
  • 10 ounce can mandarin oranges in juice drained

  1. Wash hands and clean cooking area.
  2. Be sure to clean the tops of canned food items before opening.
  3. Add pineapple and pudding mix to a large bowl and mix.
  4. Add whipped topping and stir until well incoporated
  5. Add in mandarin oranges.
  6. Cover and let set in refrigerator for 20-230 minutes or overnight.

The whole-wheat base, and mix of applesauce and bananas, makes these muffins an easy way to incorporate whole grains and fruit into your day. We like to pair a muffin with fruit and low-fat yogurt for a simple, yet filling breakfast. After school, this muffin and a side of fruit is perfect served alongside homework!

Ingredients
  • 1 1/2 cups white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup skim milk
  • 1/4 cup granulated white sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 2 medium ripe bananas peeled and mashed

  1. Preheat oven to 350 degrees.
  2. Wash your hands and clean your cooking area.
  3. Combine white whole wheat flour, baking powder, baking soda, and salt. Set aside.
  4. Whisk applesauce, milk, sugar, vanilla, and egg until well combined. Gently add bananas to wet ingredients.
  5. Fold flour mixture into wet ingredients, just until combined.
  6. Divide muffin batter among 12 lined muffin tins.
  7. Bake 18-20 minutes, until cooked through.

Dressing
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 clove fresh garlic
  • 1 tbsp dijon mustard
Salad
  • 3 cups kale chopped
  • 3 cups romaine chopped
  • 1 medium apple thinly sliced
  • 1/3 cup grated Parmesan cheese
  • 1 medium avocado cubed

  1. Wash your hands and preparation area
  2. Whisk all of the dressing ingredients in a small bowl, or shake them up in a small mason jar.
  3. Rinse kale, romaine, apple and avocado before chopping.
  4. De-stem the kale (cut it away from the woody stems), and chop. Chopped romaine lettuce for salad.
  5. Add the sliced apple, grated cheese, and top with avocado.
  6. Toss salad with the dressing until everything is well combined.
  7. Season to taste with salt and pepper.
  8. Serve in your favorite platter and enjoy!
