Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 medium head cauliflower riced
  • 1/3 cup carrot diced
  • 1/3 cup asparagus cut into 1/2 inch sections
  • 1/4 cup green peas
  • 1/2 cup onion chopped
  • 1 large egg
  • 1 pound chicken breast cooked
  • 3 green onions sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions
  1. Start with a clean prep area and wash hands
  2. If not already done, rice the cauliflower and chop vegetables.
  3. In a large pan, add olive oil and heat on medium.
  4. Add cauliflower, carrots, green peas, asparagus, and onions.
  5. Stir and allow to cook until the vegetables start to soften, about 5 minutes.
  6. Create a hole in the middle of the cauliflower mixture and add the egg. Scramble the egg in the pan and stir it together with the vegetables.
  7. Once egg is cooked in, stir in cooked chicken.
  8. Stir in soy sauce, sesame oil, and green onions.
  9. Serve warm and enjoy!

Ingredients
  • 4 cups bok choy chopped
  • 1/2 cup green onions chopped
  • 6 ounces dry Chow Mein noodles
  • 1/4 cup olive oil
  • 1/4 cup Vinegar
  • 1/4 cup sugar
  • 2 tablespoons low sodium soy sauce

  1. Wash and chop bok choy and green onions.
  2. Add to large mixing bowl.
  3. Break up chow Mein noodles and add to mixing bowl.
  4. Add olive oil, vinegar, sugar, and low sodium soy sauce to jar and close lid.
  5. Shake well to combine.
  6. Drizzle dressing over contents of mixing bowl.
  7. Gently toss and serve

Ingredients
  • 2 1/2 cups masa harina
  • 1/3 cup onion chopped
  • 2 cups water
  • 2 tablespoons vegetable oil
  • 3 cups black beans drained, rinsed
  • 2 tablespoons cilantro
  • 1 avocado chopped
  • 2 green onions chopped
  • romaine or cabbage chopped

Instructions
  1. Wash your hands and clean your cooking area.
  2. In a sauce pain, combine chopped onion with 1 tablespoon water and cook on medium heat until onion is softened.
  3. Add 2 cups of beans and mash with potato masher. Add remaining unmashed beans and heat through or about 5 minutes.
  4. Combine the masa and water in a bowl until dough holds together. Roll dough into 12 balls the size of golf balls. Flatten each ball on parchment paper and 1/4 inch think.
  5. Heat a large skillet with oil over medium-high heat. When hot, add 2-3 sopes and cook for about 3-4 minutes on each side until slightly browned.
  6. To serve, top each sope with the mashed bean mixture, chopped lettuce or cabbage, avocado, green onion and cilantro.

Ingredients
  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons sesame oil
  • 2 cups whole grain brown and wild rice mix
  • 3 cups shredded cooked chicken
  • 1 cup diced yellow bell pepper
  • 1 can water chestnuts chopped
  • 1/2 cup green onions chopped
  • 1 cup chow Mein noodles
  • 6 cup baby spinach leaves
  • pepper to taste

  1. Whisk together soy sauce, vinegar, and sesame oil in a large bowl.
  2. Prepare brown and wild rice mix according to package directions.
  3. Stir chicken, next 4 ingredients, and rice into soy sauce mixture.

Ingredients
  • 8 ounces spinach fettuccini noodles
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 3/4 pound medium shrimp peeled and deveined
  • 1 (14.5 ounce) can diced tomatoes with basil oregano and garlic unsalted
  • 1/2 cup half and half fat free
  • 1/4 cup green onions sliced

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, cook garlic and shrimp in hot oil in large skillet over medium-high heat until shrimp are pink and opaque.
  3. Stir in tomatoes; simmer 5 minutes.
  4. Blend in half and half and green onions; heat through (do not boil).
  5. Serve over hot pasta.
