Loaded Veggie Spaghetti

Ditch the guilt and load up on the goodness with this veggie-packed spaghetti! We’ve swapped regular pasta for whole wheat spaghetti and lightened up the creamy sauce with nonfat milk and low-sodium cannellini beans for added fiber and protein. Using no-sodium chicken broth and salt-free Italian seasoning helps keep the flavor high without adding unnecessary sodium. It’s comfort food you can feel great about!

Ingredients
  • 8 ounces whole wheat spaghetti
  • 3 tablespoons olive oil
  • 1/2 cup yellow onion diced
  • 2 stalks celery diced
  • 1/2 cup carrots diced
  • 2 cloves garlic minced
  • 8 ounces baby Bella mushrooms diced
  • 2 medium zucchinis diced
  • 1/4 cup all-purpose flour
  • 2 cups no sodium chicken broth
  • 1 teaspoon black pepper
  • 2 teaspoon salt-free Italian seasoning
  • 1 cup nonfat milk
  • 15 ounce can of low sodium cannellini beans drained and rinsed
  • 10 ounce can fire roasted diced tomatoes with green chilis drained
  • 2 teaspoons white wine vinegar
  • 1 cup low fat shredded sharp cheddar cheese
  • 1 cup part skim shredded mozzarella cheese

Instructions
  1. Preheat the oven to 375 and bring a large pot of water to boil over high heat and begin preheating a skillet over medium high heat.
  2. Once the water is boiling add the spaghetti and boil until the pasta is al dente. Drain the pasta in a colander
  3. While the pasta is cooking start making the sauce. Heat the olive oil in the skillet and add the onion, celery, and carrots. Sauté for 3-4 minutes until onion is translucent and carrot are softer.
  4. Add the mushrooms to sauté for 3-4 minutes until they start to brown. Add zucchini and sauté for 2-3 minutes until soft.
  5. Add the garlic into the skillet. Sprinkle the flour into the skillet and stir with the vegetables. Cook for 2-3 minutes, stirring occasionally, until flour is absorbed.
  6. Slowly pour the chicken broth into the skillet and stir to fully dissolve the flour from the bottom of the skillet. The flour will start to thicken the sauce when it returns to a simmer. Add black pepper, Italian seasoning, 1/2 cup cheddar cheese, 1/2 cup mozzarella cheese, and the nonfat milk to the skillet. Stir until the cheese is melted and the sauce is smooth.
  7. Turn the heat off the skillet and add the drained diced tomatoes with green chiles, the drained cannellini beans, 2 teaspoons white wine vinegar and the cooked spaghetti to the pan. Mix until combined.
  8. Add the veggie spaghetti mixture to a 9×13” casserole dish. Top with the remaining 1/2 cup of cheddar cheese and 1/2 cup of mozzarella cheese.
  9. Bake in the oven for approximately 25 minutes or until the mixture is bubbly and the cheese is melted.

Ingredients
  • 2 Tablespoons olive oil divided
  • 1/2 teaspoon garlic powder
  • 1/2 cup yellow onion sliced
  • 2 cups arborio rice dry -
  • 2 cups fresh Swiss Chard chopped
  • 1/2 cup white wine vinegar
  • 5 1/2 cups unsalted chicken broth divided
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 Tablespoon unsalted butter divided
  • 1 teaspoon ground black pepper
  • 2 cups fresh kale chopped
  • 1 1/2 cups frozen sweet peas
  • 1/4 cup basil pesto
  • 1 pound fresh or frozen large scallops
  • 1 Tablespoon Italian seasoning
  • 1/2 Tablespoon lemon juice

Instructions
  1. Pre-heat the oven to 350 degrees, arranging a rack in the middle of the oven.
  2. Heat 1 Tbsp. olive oil in a 3-4 quart Dutch oven over medium heat. Add sliced onion and garlic powder, and sauté about 2 minutes until it begins to soften. Add the rice and stir until each grain is coated and begins to lightly toast (approximately 1-2 minutes).
  3. Turn heat up to high and pour white wine vinegar into the Dutch oven, scraping the pan and stirring constantly until liquid cooks out. Add 4 cups of the chicken broth into the pot, stirring to combine well, and bring to a boil.
  4. Cover the Dutch oven with the lid and place in the oven to bake for 15-20 minutes until rice is just slightly underdone.
  5. Remove risotto from the oven, and place back on the stove over medium heat. Uncover and add the leftover 1 ½ cups chicken broth, parmesan cheese, 1 Tbsp. butter, black pepper, kale, and Swiss chard. Continue to cook, stirring constantly until liquid absorbs and rice becomes creamy (about 5-7 minutes).
  6. Stir in the pesto and the frozen peas to the finished risotto.
  7. In a separate pan, heat the remaining 1 Tbsp. olive oil and ½ Tbsp. butter over medium heat. Add the scallops and sauté 2-3 minutes per side or until golden brown (internal temperature of 145 degrees). Season with Italian seasoning and drizzle with lemon juice, spooning remaining oil and butter over scallops to coat.
  8. Serve the risotto immediately in bowls, topped with the seared scallops. Enjoy!

Dressing
  • 1/4 cup olive oil
  • 1/4 cup diced red onion
  • 1/4 cup white wine vinegar
  • 1/4 cup cilantro chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
Salad
  • 4 cups Corn off the cob or frozen (defrosted)
  • 1 cup cherry tomatoes sliced
  • 1 green bell pepper diced
  • Zest of 1 lemon about 3 tablespoons
  • juice of 1 lemon about 3 tablespoons
  • 1/2 avocado diced
  • 1/3 cup green onion diced

  1. Wash hands and clean preparation area.
  2. Combine all dressing ingredients into a bowl and mix. Set aside.
  3. In a large bowl combine all other salad ingredients.

Ingredients
  • 1 pound skinless boneless chicken breast, cut into ½ inch strips
  • 1/2 cup nonfat Greek yogurt, plain
  • 1 lemon, juice of
  • 2 tablespoons white wine vinegar
  • 4 cloves garlic
  • 1/4 teaspoon pepper
  • 1/2 Tablespoon dried oregano
  • 1 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 red onion cut into thick strips
  • 1 bell pepper cut into strips
  • 1 head butter lettuce
  • 6 Pita bread

  1. In a sealable plastic bag or glass container with a lid combine the chicken, greek yogurt, lemon juice, vinegar, garlic, pepper, oregano, paprika, cumin, coriander, rosemary, thyme, cinnamon, salt, red onion and bell pepper. Marinate in the refrigerator for at least 30 minutes but can be up to overnight.
  2. On a sheet pan lined with tin foil, spread out the chicken and vegetables in an even layer.
  3. Cook in a 375 F degree oven for 25 to 30 minutes or until chicken reaches an internal temperature of 165 degrees F.
  4. Toss to combine the chicken and vegetables together on the sheet pan.
  5. Serve on pita bread with 2-3 leaves of lettuce and any additional suggested toppings. *Additional Topping ideas: cucumber, tomatoes, kalamata olives, tzaziki sauce.

  • 1 1/3 cups cooked penne or similar pasta
  • 8 ounces skinless chicken breast cooked and diced (about 2 cups)
  • 1 large celery stalk thinly sliced
  • 1 large scallion trimmed and chopped
  • 1 tablespoon minced fresh cilantro
Dressing
  • 1/3 cup orange juice
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon ground pepper
  • 1/8 teaspoon salt
  • 1 tablespoons white wine vinegar

  • 1/4 cup small diced avocado
