Ingredients
  • 2 1/2 cups nonfat plain Greek yogurt
  • 4 heads of garlic
  • 4 tablespoons olive oil
  • 1/4 teaspoon black pepper fresh cracked
  • 1/2 teaspoon fresh rosemary minced
  • 4 ounces gorgonzola cheese

Instructions
  1. Preheat oven to 400 degrees. Cut 3 squares of aluminum foil.
  2. Cut the tops off the garlic heads from the papery pointed end, and cut enough to expose the tops of the garlic cloves, about ½ an inch.
  3. Place each cut garlic clove inside the aluminum foil square and begin to bunch up the foil to create a casing for the cloves. On each head, drizzle 1 tablespoon of olive oil. Combine the pepper and rosemary and sprinkle the spices evenly over the 3 garlic heads.
  4. Close the foil to create a packet and bake in the oven for 35-40 minutes.
  5. Remove garlic heads from the oven and open the foil packets, let cool just enough to handle.
  6. On a cutting board or in a bowl, squeeze all of the garlic cloves out of their roasted casings and mash with a fork to create a rough paste.
  7. In a bowl, combine the Greek yogurt, the gorgonzola cheese, and the garlic, and combine well. Use a blender, food processor or hand blender if a smoother texture is preferred.
  8. Serve with fresh-cut vegetables such as bell pepper slices, celery, carrots, pita chips, or similar*.

Ingredients
  • 2 cups butternut squash cubed, steamed
  • 4 sundried tomato halves in olive oil drained
  • 2 cups spinach leaves frozen, thawed, and drained
  • 1 cup ricotta cheese low-fat
  • 1 Tablespoon Ranch Dip Mix
  • 3 Tablespoons water
  • 1 cup mozzarella cheese nonfat, shredded

  1. Wash your hands and clean your preparation area. Preheat oven to 375 degrees F.
  2. Add cooled steamed squash, sundried tomatoes, drained spinach leaves, ricotta cheese, ranch dip mix, and water into a blender. Combine until smooth.
  3. Pour the mixture into an oven-safe baking dish. Stir in ½ cup of mozzarella cheese into the dip.
  4. Sprinkle the remaining mozzarella cheese on top of the dip.
  5. Bake for 20-30 minutes until heated, and the cheese is browning on top.

Ingredients
  • 2 cups reduced sodium fat free vegetable broth
  • 1 cup carrots chopped
  • 1 cup bell pepper chopped
  • 10 ounces frozen riced cauliflower
  • 1 cup uncooked quinoa
  • 1 cup low fat Monterey Jack cheese blend
  • 8 ounces no salt added tomato sauce
  • 15 ounces diced tomatoes with green chilis
  • 15 ounces reduced sodium black beans
  • 1 clove garlic minced
  • 1 Tablespoon lime juice
  • 1 1/2 Tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper

  1. Begin by washing your hands and cleaning your counter tops or other surfaces. Rinse produce under cool running water before chopping.
  2. Line the slow cooker with a liner bag, if preferred.
  3. Chop the vegetables. Measure all ingredients and place in the slow cooker, except the cheese. Stir until fully combined.
  4. Cook on high setting for 3 hours or low setting for 5 hours.
  5. Sprinkle the cheese on top and cook for 15 minutes more with the lid on the slow cooker.
  6. Best served warm.

Caramelized Onions
  • 1 cup onions finely chopped
  • 2 Tablespoons olive oil
  • 1/4 teaspoon chicken bouillon dehydrated
  • 1/16 teaspoon pink Himalayan salt
French Onion Dip
  • 1 1/4 cup Greek yogurt plain, nonfat
  • 1/2 cup mayonnaise fat-free
  • 1/4 cup green onion tops minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried parsley
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon pink Himalayan salt
Fresh Veggies for Dipping
  • 2 bell pepper sliced for dipping
  • 2 English cucumber sliced for dipping
  • 5 cup broccoli florets fresh
  • 1 pound baby carrots

  1. Clean your area and wash your hands before you begin.
  2. Saute onion in olive oil, chicken bouillon, and salt.
