Cinnamon Apple Breakfast Casserole is a delicious and healthy breakfast option! Whether you’re meal prepping for the week or serving a group, this casserole can be easily pulled together. You can even assemble it the night before and bake in the morning!

Ingredients
  • 2 Tablespoons Tablespoons unsalted butter
  • 2 large apples
  • 1.5 teaspoon cinnamon
  • 12 slices 100% whole wheat bread
  • 6 large eggs
  • 1.5 cups 2% milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon nutmeg
  • 1/4 cup brown sugar divided
  • 1/3 cup pecans chopped

Instructions
  1. Wash hands and clean preparation area, rinse apples under cool running water. Preheat your oven to 375 Degrees F.
  2. Remove the core from the apples and chop into small chunks.
  3. In a medium saucepan melt the butter.
  4. Add the apples and toss until all of the apples are coated with butter. Let the apples sit and begin to soften on a medium heat, stir occasionally.
  5. Add in ground cinnamon and toss. Add 1 Tablespoon brown sugar and add to the apples. This will help the apples brown and soften more. Lower the heat to simmer and set aside after 5 minutes.
  6. In a medium bowl, whisk eggs and milk together, adding in ground nutmeg and vanilla and remaining brown sugar. Cut the bread into large chunks and add pieces to a baking pan.
  7. Pour the egg mixture over the bread, letting the bread soak up the egg and milk. Make sure to coat all of the bread.
  8. Once the apples are done, layer the apples onto the bread and fill all open spaces with apples.
  9. Cover the casserole and place in the oven and bake for 30 minutes. Remove from oven and sprinkle chopped pecans on top, cook for an additional 10 minutes or until the egg has set and the pecans are aromatic.

Craving something sweet? These quick and easy mini apple pies are perfect for a snack or holiday dessert! Just mix diced apples with cinnamon, maple syrup, coconut oil and sugar, fill store bought wonton wrappers, and air fry until golden. Serve warm with vanilla ice cream for an extra treat!

  • 10 each wonton wrappers
Apple Filling
  • 4 small apples
  • 2 Tablespoonss maple syrup
  • 1 teaspoon coconut oil
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
Sauce
  • 10 each Medjool dates pitted
  • 1/2 cup coconut milk
  • 2 Tablespoonss maple syrp
  • 1/4 teaspoon cinnamon
  • 4 Tablespoons water
  • 1/4 teaspoon vanilla extract

Apple Pie Filling
  1. Preheat airfryer to 380 degrees F and spray with Spray oil.
  2. In a medium mixing bowl, add the peeled apple cubes and toss with 1 tablespoon maple syrup, coconut oil, sugar and cinnamon
  3. Add mixture to air fryer basket in an even single layer.
  4. Airfry for 10-14 minutes, shaking half way through. They should be soft and golden.
  5. Remove from airfryer and toss with remaining 1 tablespoon of maple syrup.
Sauce
  1. Boil the dates in a saucepan with just enough water to cover for 10 minutes.
  2. Drain, but reserve 4 tablespoons of the water and let sit until cool to the touch. Lightly chop dates and place in food processer with coconut milk, maple syrup, cinnamon and reserved water. Blend until super smooth.
  3. Pour sauce back into the saucepan and bring to a rolling boil. Simmer for about 5 minutes or until sauce thickens.
Assembly
  1. Lay out wonton wrappers out on a flat surface.
  2. Place 1 ½ teaspoons of the apple mixture in the middle of the wonton wrapper.
  3. Place 1 teaspoon of the caramel sauce on top of filling.
  4. Using the back of the teaspoon, dip it in the caramel sauce and run it along the edges of the wonton wrapper
  5. Pull the 4 edges of the wrapper up in a little bunch and pinch together to secure.
  6. Place assembled wonton wrappers in the airfryer until full and spray with spray oil to coat the wontons.
  7. Close airfryer and bake at 350 degrees F for 7 minutes.
  8. When baked, remove wontons from airfryer and drizzle with caramel sauce if desired.

Ingredients
  • 2 puff pastry sheets from frozen, thawed
  • 5 medium apples stem and core removed, sliced thinly
  • 4 ounces sharp white cheddar cheese reduced fat, extra light, shredded
  • 8 teaspoons honey
  • 2 teaspoons fresh thyme leaves removed from stem
  • 1 large egg
  • 1 tablespoon water

  1. Preheat oven to 400 Degrees F.
  2. Line two baking sheets with parchment paper or a silicone baking mat.
  3. Roll out a sheet of puff pastry on each lined baking sheet.
  4. Arrange apple slices overlapping but in a single layer in the center of the each puff pastry sheet, leaving ½ and inch of pastry exposed all the way around.
  5. Top the apple slices with cheddar cheese, 2 ounces on each.
  6. Drizzle 4 teaspoons of honey on top of apples and cheese and sprinkle ½ teaspoon of fresh thyme leaves on each galette.
  7. Fold the ½ inch border of pastry inward to create a crust. Whisk egg and water together and brush over edges of puff pastry.
  8. Bake in the oven for 400 Degrees F for 18-22 minutes or until pastry has browned and apple has softened slightly. Makes 2 galettes.

  2. Wash carrots, apples, and celery. With a knife or peeler, peel the carrots.
  3. Grate the carrots, and chop the apples, and celery and place in large mixing bowl.
  4. Add the lemon juice, raisins, yogurt, and cinnamon to the bowl of chopped carrots, apples, and celery.
  5. Stir until evenly coated.
  6. Eat immediately or cover and allow to chill in the refrigerator before serving.

  • 3/4 cup nonfat plain Greek yogurt
  • 1/4 cup mayonnaise with olive oil, reduced fat
  • 3 Tablespoons honey
  • 2 tablespoons apple cider vinegar
Coleslaw Mix
  • 1 small green cabbage, shredded makes around 7 cups shredded
  • 1 1/2 cups carrots, shredded
  • 2 medium apples sliced
  • 1/2 cup green onions sliced
  • 1/2 cup dried cranberries no sugar added

  6. Serve with your favorite main dish!
  7. Be sure to refrigerate coleslaw if not serving immediately.
