Ingredients
  • 1 lb extra lean ground beef cooked and drained
  • 16 ounces uncooked jumbo pasta shells
  • 1 tbsp olive oil
  • 1/2 cup frozen bell pepper/onion stir fry vegetables
  • 2 cloves garlic finely chopped
  • 1 small zucchini diced
  • 1 (2 1/4 ounce) can sliced ripe olives drained
  • 1 (14 ounce) jar unsalted tomato sauce
  • 1/2 cup fat free ricotta cheese
  • 1/4 cup fat free egg substitute
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup reduced fat mozzarella cheese shredded

Instructions
  1. Heat oven to 350°F.
  2. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  3. Cook and drain pasta shells as directed on package.
  4. Meanwhile, in 10-inch skillet, heat oil over medium heat until hot.
  5. Cook stir-fry vegetables, ground beef and garlic in oil 2 to 3 minutes, stirring occasionally, until crisp-tender.
  6. Add zucchini; cook 4 minutes, stirring occasionally.
  7. Stir in olives and 1/4 cup of the tomato sauce.
  8. Cook until hot, stirring frequently.
  9. Remove from heat.
  10. In medium bowl, mix ricotta cheese, egg, Parmesan cheese and 1/2 cup of the shredded cheese. Stir in zucchini mixture until well mixed.
  11. Fill each cooked pasta shell with about 2 tablespoons zucchini mixture.
  12. Place in baking dish.
  13. Pour remaining tomato sauce over shells.
  14. Cover with foil; bake 30 minutes.
  15. Sprinkle with remaining 1/2 cup shredded cheese.
  16. Bake uncovered 5 to 10 minutes longer or until bubbly and cheese is melted.

Ingredients
  • 1 pound extra lean ground beef 3% fat, 97% lean
  • 1 16 ounce can unsalted pinto beans rinsed and drained
  • 1 14.5 ounce can unsalted stewed tomatoes un-drained
  • 1 cup uncooked long grain rice
  • 1 cup water
  • 2/3 cup salsa

  1. In a large skillet, brown the ground beef.
  2. Cook until no longer pink; drain.
  3. Add the remaining ingredients.
  4. Bring to a boil.
  5. Reduce heat, cover and simmer for 20-25 minutes or until rice is tender.

Ingredients
  • 12 ounces extra lean ground beef chuck or round
  • 1 large onion finely chopped
  • 1 15 ounce can no-salt-added diced tomatoes un-drained
  • 2 tablespoon all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup water
  • 1/4 cup chili sauce
  • 1/4 cup ketchup
  • 8 whole-wheat hamburger buns

  1. Crumble beef into a large nonstick skillet; cook over medium heat until it starts to sizzle, about 1 minute.
  2. Add onion and cook, stirring occasionally, breaking up the meat with a wooden spoon until the onion is soft and the moisture has evaporated, 8 to 10 minutes.
  3. Add tomatoes and flour; stir to combine.
  4. Stir in water, chili sauce, ketchup and Worcestershire sauce and bring to a simmer, stirring often.
  5. Reduce heat to a low simmer and cook, stirring occasionally, until the sauce is thickened and the onion is very tender, 8 to 10 minutes.
  6. Serve on warm buns. Enjoy!

Ingredients
Meatloaf
  • 1 pound extra lean ground beef
  • 1 small onion chopped
  • 1/2 teaspoon salt
  • 1/2 cup unsalted tomato sauce
  • 1 cup bread crumbs or cracker crumbs
  • 1 egg beaten
  • 1/4 teaspoon pepper
  • 1/4 teaspoon Worcestershire sauce
Topping
  • 1/2 cup unsalted tomato sauce
  • 2 tablespoons molasses
  • 1 cup water
  • 2 tablespoons Vinegar

  1. Spray a 9x13 inch baking dish with nonstick cooking spray.
  2. Mix beef, onion, salt, tomato sauce, bread crumbs, egg, and pepper.
  3. Make into one large island and place in the baking dish.
  4. In a separate bowl, mix all topping ingredients and pour over meatloaf.
  5. Bake at 350˚F for 45-50 minutes or until internal temperature reaches 160˚F.

Ingredients
  • 1 pound extra lean ground beef
  • Black pepper to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano
  • 1 small onion minced
  • 1/2 cup quick cooking oatmeal
  • 1 medium zucchini coarsely grated
  • 1 egg lightly beaten
  • 1 10 ounce package frozen chopped spinach thawed and squeezed dry
  • 3 medium bell peppers cuthalf lengthwise, cored
  • 2 14.5 cans no salt added diced tomatoes juice reserved

Instructions
  1. Preheat oven to 350°F.
  2. In a large bowl, combine the beef, salt, pepper, oregano, onion, oatmeal, zucchini, egg, and spinach. Mix until well combined.
  3. Arrange the pepper halves cut side up in a 9X13 baking dish and fill each pepper half with the meat mixture.
  4. Pour the tomatoes with their juices over the peppers.
  5. Cover with aluminum and bake for 30 minutes. Uncover and bake the peppers until mixture inside peppers reaches 165 degrees. (about 30-45 more minutes)
