Strawberry Soup
Strawberry season is almost here! And if you’re like me…you just can’t wait!! This recipe is great for tart strawberries or overripe strawberries.
Ingredients
- 1 lb fresh strawberries
- 1 1/4 cup low fat vanilla yogurt
- 3 tbsp confectioners' sugar
- 2 tbsp orange juice concentrate
- 1/8 tsp almond extract

- Wash strawberries and remove stem top. In a blender, add all ingredients; cover and process until smooth. Garnish as desired.

Black Bean Salsa with Pineapple
Ingredients
- 1 (15 ounce) can low sodium black beans drained and rinsed
- 1 (15 ounce) can pineapple tidbits in natural juice drained but reserve juice
- 1 cup diced bell pepper
- 6 green onions thinly sliced
- 1/4 cup cilantro leaves chopped
- 1/4 cup reserved pineapple juice
- 1 tbsp canola oil
- 1 seeded jalapeno pepper minced
