Ingredients
  • 1 slices medium green cabbage cut into wedges or thick
  • 1 large yellow onion sliced
  • 4 links chicken bratwurst
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon mustard powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh parsley chopped

Instructions
  1. Preheat oven to 425°F.
  2. Arrange cabbage and onions on a large sheet pan.
  3. In a small bowl, whisk together olive oil, garlic, mustard powder, smoked paprika, caraway seeds, thyme, black pepper, and apple cider vinegar.
  4. Drizzle mixture over cabbage and onions. Toss gently to coat evenly.
  5. Place bratwurst links between the vegetables on the sheet pan.
  6. Bake for 35-40 minutes, turning the cabbage and bratwurst halfway through, until the cabbage is caramelized and the bratwurst is cooked through.
  7. Sprinkle with fresh parsley before serving.

Ingredients
  • 2 cups roasted chicken breast shredded
  • 1 cup cabbage shredded
  • 1/2 cup carrots shredded
  • 1/2 cup red bell pepper julienned
  • 1/4 cup green onions chopped
  • 1/4 cup cilantro leaves chopped
  • 1/3 cup reduced fat smooth peanut butter
  • 1 tablespoons reduced sodium soy sauce
  • 1/2 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1/4 cup fresh lime juice
  • 1 teaspoon red pepper flakes
  • 6 Eggroll wrappers
  • Non stick cooking spray

Instructions
  1. Wash hands and clean all cooking surfaces
  2. Preheat air fryer to 400 degrees
  3. In a large bowl combine, shredded chicken, shredded cabbage, julienned red bell peppers, chopped green onions, chopped cilantro leaves, and mix
  4. In a small bowl mix together, reduced fat peanut butter, reduced sodium soy sauce, rice vinegar, honey, lime juice and red pepper flakes.
  5. Add sauce to chicken and vegetable mixture, stir until well combined
  6. Put egg roll wrapper on your clean cooking surface. Spoon approximately ½ cup of mixture over the bottom third of the wrapper.
  7. Wet the outside edges of the wrapper with water. Fold the edges toward the center of the wrapper and roll closed.
  8. Repeat with the remaining wrappers and mixture.
  9. Spray egg rolls with nonstick spray and place seam side down in the air fryer. Ensure there is enough room for air to flow around eggrolls. You may have to cook in batches.
  10. Cook egg rolls for 6-8 minutes or until golden brown.

Ingredients
  • 1 pound extra lean ground beef
  • 1/2 cup bread crumbs
  • 1 large egg
  • 1/2 teaspoon black pepper
  • 1 head cabbage shredded
  • 2 15 oounce cans tomato sauce low sodium
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 8 ounce cranberry sauce
  • 1 tablespoon lemon juice
  • 4 giner snap cookies crushed

Instructions
  1. In a medium bowl, combine ground beef, bread crumbs, egg and black pepper. Form into 1 inch meatballs.
  2. Place 1/2 of shredded cabbage in a large pot, add meatballs. Spoon cranberry sauce over the meatballs and add remaining cabbage
  3. In a bowl, mix the tomato sauce, Italian seasoning, and garlic powder. Pour over meatball/cabbage mixture.
  4. Simmer uncovered, 20 minutes. Stir gently being careful not to break up meatballs. Add the lemon juice and cookie crumbs. Simmer another 10-15 minutes until meatballs are completely cooked.
