Butternut Squash Mac n Cheese

Mac n Cheese is a comfort food classic but allow us to dress up your mac n cheese with a winter favorite, butternut squash! The butternut squash and the blend of cheeses in this dish really make for a unique mac n cheese experience!

Ingredients
  • 8 ounces Elbow pasta
  • 2 teaspoons olive oil
  • 1 1/2 cups butternut squash fresh, cubed
  • 1/2 Tablespoon butter unsalted
  • 1 Tabblespoon olive oil
  • 3 Tablespoons flour
  • 3/4 cup Milk 1%
  • 1/2 cup reduced fat Mozzarella Cheese, shredded
  • 1/4 cup reduced fat cheddar cheese
  • 1/4 cup Asiago Cheese
  • 1/4 teaspoon salt
  • 1 teaspoon pepper

Instructions
  1. Wash your hands and workspace
  2. Bring a stockpot of water to boil. Cook pasta according to the package
  3. Cut your butternut squash into 1-inch pieces.
  4. In a separate saucepan, add your 2 teaspoons olive oil on medium heat. Add butternut squash into the pan and cover. Cook for about 5 minutes or until it is tender with a fork.
  5. Pour squash into a blender and puree
  6. In a saucepan, add your butter and 1 Tablespoon olive oil and melt. Once melted add in your flour and whisk continually, add your milk slowly to prevent clumping.
  7. Add your cheeses, butternut puree, and spices and mix well. Incorporate pasta elbows.
  8. Pour into a 9x9 glass pan and cook at 350*F for 20 minutes

  • 2 cup mushrooms
  • 1 cup red onion large dice
  • 2 cup zucchini sliced
  • 2 cup yellow squash sliced
  • 1 Tablespoon olive oil
Sour Cream Sauce
  • 3 Tablespoons sour cream light
  • 2 Tablespoons cotija cheese
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon chili powder

  1. Wash your hands and clean your counter tops. Rinse produce under cool running water before slicing.
  2. Using AgriLife fire and heat safety guidelines, prepare the grill to medium heat.
  3. Make a sour cream sauce by mixing sour cream, cotija cheese, kosher salt, and chili powder in a small bowl. Add to a piping bag or disposable, sealable bag.
  4. Add vegetables to a grilling basket and drizzle olive oil on top and toss.
  5. Grill in 3-minute intervals. Toss vegetables with a clean utensil after every 3 minutes. Grill until veggies are tender. Depending on the heat of the fire, it could take up to 15 minutes.
  6. Remove from grill. After snipping the end of the piping bag, pipe sour cream sauce over veggies.
  7. Serve warm.

Ingredients
  • 6 large tomatoes thinly sliced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons grated Parmesan cheese

  1. Wash and cut the tomatoes into semi-thin slices, approx. 1/8 inch.
  2. Drizzle olive oil on tomato slices to coat.
  3. Place slices onto dehydrator shelves or a baking pan.
  4. In a small bowl whisk together the remaining ingredients.
  5. Carefully spoon out the mixture on top of each tomato slice.
  6. If baking, place the sheet in a 200-degree oven and check every 30 minutes until edges show some charring, could take 4-5 hours. To make as a side dish: bake for 25-30 minutes and enjoy.
  7. If you are dehydrating, depending on how thick the slices of tomato are, most machines could take anywhere from 12-24 hours.

Choose lower fat toppings such as lime juice, chopped fresh cilantro, chili powder, or reduced-fat sour cream.

  • 6 Ears of Fresh Corn on the Cob husks and silks removed
  • 1 cup water

  1. Insert the metal trivet into the inner pot of your 6-quart* cooker. Pour in 1 cup of water.
  2. Place the ears of the corn on the trivet, alternate the direction of the ears of corn in each layer. Three ears of corn on the bottom, three on top.

Lemon Pepper Brussels Sprouts

Brussels sprouts are a nutritious vegetable packed with antioxidants, fiber, and vitamin C.  Deliciously sautéed or roasted Brussels sprouts for 30-40 minutes will have an exceptional caramelized flavor with a crispy center.  However, sautéing and steaming just under 15 minutes in your Instant Pot provides a nutritious side dish with just as much rich flavor. Save some cooking time and add the Lemon Pepper Brussels Sprouts to your weekly menu.

Ingredients
  • 2 pounds brussels sprouts halved
  • 1 1/2 cups low sodium chicken broth
  • 1 Tablespoon olive oil
  • 1 Tablespoon garlic powder
  • 1 Tablespoon lemon pepper seasoning blend
  • 1/2 cup unsalted walnut pieces roasted

  1. Rinse Brussel sprouts and slice off the bottom end. Remove any wilted leaves and slice vertically.
  2. Place Brussels sprouts in a 6-quart cooker, pour in chicken broth and olive oil, mix well.
  3. Set cooker to SAUTE. Add garlic powder and lemon pepper, combine evenly and cook for 5-8 minutes.
  4. Close the lid of your cooker set the steam release valve to a sealed position.
  5. Press MANUAL or PRESSURE COOK button for 6 minutes on HIGH PRESSURE.
  6. Quick-release after the alarm sounds, carefully remove the lid.
  7. Gently combine walnut pieces over Brussels sprouts.
  8. Use a slotting spoon to remove from the pot and serve.
  9. May squeeze half lemon over the side dish for additional flavor.
