In many parts of Texas, zucchini is a flourishing crop for gardeners this year. These Zucchini Chips and Dip are a great and delicious way to utilize this produce item.

Ingredients
  • 1 medium zucchini
  • 3/4 cup Parmesan cheese shredded
  • 1 cup plain greek yogurt low fat
  • 1/2 teaspoon ground dill
  • 1/2 teaspoon ground parsley
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt

Air Fryer Instructions
  1. Clean your area and wash your hands before you begin.
  2. Preheat air fryer at 370 degrees F for 3 minutes.
  3. Slice zucchini ends off, approximately ½ inch in, and discard.
  4. Cut zucchini into ¼ inch slices.
  5. Place slices in the air fryer basket/ tray in a single layer.
  6. Sprinkle a thin layer of cheese over the zucchini slices.
  7. Cook in the air fryer for 12 minutes at 370 degrees or until the cheese is turning brown and crisp.
  8. Mix greek yogurt and seasonings together and serve as a dip.
Oven Instructions

  5. Place slices in the air fryer in a single layer.

  7. Cook in the oven for 15-18 minutes at 370 Degrees or until the cheese is turning brown and crisp.
  8. Mix Greek yogurt and seasonings together and serve as a dip.

Ingredients
  • 4 medium bananas
  • 1 cup spinach chopped
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 Tablespoons sugar

  1. Wash your hands and clean your preparation area.
  2. Peel and slice the bananas into chunks, place them in a sealable container and freeze them for at least 2 hours.
  3. In a food processor or high-powered blender, place the frozen bananas, spinach, cocoa powder, and sugar. Process until very smooth - between 3-5 minutes.
  4. Place the processed "ice cream" in a loaf pan or similar container. Cover and freeze for at least 3-4 hours.
  5. Serve the chocolate banana ice cream and enjoy! Top with family favorites* such as chocolate chips, chopped pecans or coconut flakes.

Ingredients
  • 6 large tomatoes thinly sliced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons grated Parmesan cheese

  1. Wash and cut the tomatoes into semi-thin slices, approx. 1/8 inch.
  2. Drizzle olive oil on tomato slices to coat.
  3. Place slices onto dehydrator shelves or a baking pan.
  4. In a small bowl whisk together the remaining ingredients.
  5. Carefully spoon out the mixture on top of each tomato slice.
  6. If baking, place the sheet in a 200-degree oven and check every 30 minutes until edges show some charring, could take 4-5 hours. To make as a side dish: bake for 25-30 minutes and enjoy.
  7. If you are dehydrating, depending on how thick the slices of tomato are, most machines could take anywhere from 12-24 hours.

  • 1 egg
  • 1/3 cup breadcrumbs

  2. Grate or shred zucchini into fine pieces. Pat dry zucchini with a paper towel or ring moisture out in a cheesecloth.

  4. Form a tablespoon of the mixture into small round balls and place on the baking sheet.
  5. Bake for 15-18 minutes.

Ingredients
  • 1 cup cucumber seeded and chopped
  • 1 green pepper seeded and chopped
  • 1 cup celery chopped
  • 1 cup Tomato seeded and chopped
  • 4 green onions chopped
  • 3 teaspoon fresh dill minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/3 cup fat-free sour cream
  • 1/4 cup olive oil type mayonnaise
  • 1/2 of an avocado

  1. In a large bowl, combine vegetables.
  2. Chill for at least an hour or longer to allow juices to accumulate.
  3. Drain well.
  4. In a small bowl, combine fresh dill, seasonings, sour cream, and mayonnaise.

  6. Cover and chill until ready to serve.
