Slow Cooker Quinoa and Black Bean Stuffed Bell Peppers

If you are in need of a recipe to add beans to your eating pattern, this is a perfect recipe to try. These Stuffed Bell Peppers are made in a slow cooker; perfect for a busy day. In addition, this recipe is vegetarian, and by removing the cheese, it can be vegan. This dish is a complete meal, full of protein, carbohydrates, vitamins and minerals. One pepper is filling and delicious!

Ingredients
  • 2 bell peppers (green, orange, yellow, or red)
  • 1/3 cup uncooked quinoa rinsed
  • 1 15-ounce can black beans no salt added
  • 1 8-ounce can tomato sauce unsalted
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/4 cup onion diced
  • 3/4 cup cheese Mexican blend, reduced fat, shredded
  • 1/4 cup water
  • garnish (optional, for garnish)

Instructions
  1. Cut off the tops of the peppers and scrape out the ribs and seeds. Dice the onion and measure a ¼ cup.
  2. In a bowl, combine the quinoa, beans, tomato sauce, spices, onion, and ½ cup of the cheese. Fill each pepper with the mixture.
  3. Pour ¼ cup water into the bottom of a slow cooker. Place the peppers in the water. Cover and cook on low for about 5 hours or on high for about 2 hours or until quinoa is tender.
  4. Remove the lid, distribute the remaining cheese (¼ cup) on top of the peppers, and cover again until the cheese is melted.
  5. Add cilantro, then serve.

Ingredients
  • 4 4 ounce center cut pork chops 1/2 inch thick
  • cooking spray
  • 1 1/12 cups instant brown rice
  • 2/3 cup water
  • 1/2 cup onion chopped
  • 1/4 teaspoon black pepper
  • 1 (14 1/2 ounce) can Italian style stewed tomatoes undrained and chopped
  • 1 (8 ounce) can tomato sauce unsalted

  1. Trim fat from chops. Coat a large nonstick skillet with cooking spray and place over medium-high heat until hot.
  2. Add chops and cook 2 minutes on each side. Remove from skillet and set aside.
  3. Combine rice, water, onion, pepper, tomatoes and tomato sauce in skillet. Bring to a boil.
  4. Arrange chops over rice mixture. Cover, reduce heat and cook 5-10 minutes or until liquid is absorbed and rice and pork are done and pork has reached 160 degrees F.

Ingredients
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • 1/2 medium onion chopped
  • 8 ounces chicken breast boneless, skinless
  • 1/2 pound turkey sausage
  • 2 Roma tomatoes
  • 1/2 medium green bell pepper chopped
  • 1 14.5 ounce can tomato sauce unsalted
  • 1 16 ounce package bow tie pasta
  • 1/2 tablespoon Italian herb blend

Instructions
  1. Bring a large pot of water to a boil. Add pasta and cook 8 to 10 minutes or until al dente; drain.
  2. Cut chicken breast into large bite size pieces.
  3. Cut sausage into large pieces. In a large, deep skillet over medium low heat, add oil, garlic and onion and saute to flavor oil.
  4. Add chicken and sausage to skillet and brown lightly.
  5. Add tomatoes, tomato sauce and green peppers.
  6. Bring to a boil and let simmer for 20 minutes. Season mixture with Italian herb blend.
  7. Add cooked, drained pasta to a skillet mixture.
  8. Toss and serve.

Ingredients
  • 1/2 lb extra lean ground beef chuck or round
  • 1 small onion chopped
  • 1/2 medium green bell pepper chopped
  • 1 cup elbow macaroni dry
  • 1 (8 ounce) can tomato sauce unsalted
  • 2 cups water
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1 cup canned, low sodium pinto beans
  • 1/2 cup reduced fat cheddar cheese low sodium

  1. Wash your hands and clean your cooking area.
  2. In large skillet, brown the meat.
  3. Drain off any remaining fat.
  4. Add the onions and green peppers to the meat.
  5. Cook for 5 minutes on medium to low heat.
  6. Add remaining ingredients, except cheese.
  7. Cover and cook on low heat for 15 minutes, stirring occasionally.
  8. Add cheese and heat until melted.
  9. Serve immediately.
