Texas blackberries are in season and available now. This refreshing blackberry drink is guaranteed to be on repeat this spring. The blackberries bring a slight tartness, while the honey adds a smooth sweetness. Paired with zero-sugar soda, you have a 35-calorie treat.

Ingredients
  • 1/2 cup Blackberries
  • 1/8 cup lemon juice
  • 1/4 teaspoon vanilla extract
  • 1/2 tablespoon honey
  • 1 12 ounce can sugar free ginger ale

  1. Combine black berries, lemon juice, and honey with a splash of ginger ale in a shaker and muddle. If you do not have a shaker or muddler, a glass jar and a wooden spoon work great.
  2. Pour mocktail through a strainer over ice.
  3. Fill remainder of glass with ginger ale. Garnish with whole blackberries.

Ingredients
  • 48 ounces water divided
  • 6 bags green tea
  • 1 cup Blackberries crushed
  • 1.5 Tablespoons honey
  • 1/3 cup fresh basil leaves chiffonade
  • Juice of 2 limes

  1. Clean your preparation area, and rinse fresh herbs and fruits before cutting.
  2. In a saucepan, bring 20 ounces of water to boil then remove from heat. Let tea bags steep for about 4 minutes or until desired strength.
  3. Pour into a pitcher and add honey, remaining 28 ounces of water, blackberries, basil, and lime juice.
  4. Place in the refrigerator for at least 2 hours or until cold.
  5. Serve over ice with blackberries and basil leaves from the pitcher as garnish.

  • 1/4 cup extra virgin olive oil
  • 1 lemon zest, and juiced
  • 1 Tablespoon fresh basil minced
  • 1/2 teaspoon salt

  • 6 ounces baby spinach and spring mix
  • 1/4 cup reduced fat feta cheese crumbled
  • 1/4 cup almonds sliced
  • 1/2 pint fresh blackberries halved
  • 2 medium peaches sliced

  2. Wash all produce and fruit before preparing salad.
  3. Using a canning jar, pour in olive oil, zest, and juice of 1 lemon, minced fresh basil, and salt. Cover the jar with lid and shake till blended well, let sit.
  4. Toss spinach and spring mix in a large bowl. Top greens with feta cheese, walnut pieces, blackberries, and sliced peaches.
  5. Pour dressing over salad and gently toss.

Ingredients
  • 1 pie crust pre-made
  • 2 cup fruit blueberries, blackberries, cherries, pears, apples, raspberries, apricots, and plums work best
  • 1 cup 2% milk
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sugar
  • 1/2 cup all-purpose flour

  1. In a 9x9 round baking pan, place the pre-made pie crust and press down to mold it to the pan.
  2. Place your fruit of choice evenly around the bottom of the pan. For fruit like blueberries, blackberries, raspberries, and cherries just rinse and dry the fruit. For fruit like pears, apples, and plums, you will want to wash, core, and slice the fruit, and peel if you prefer.
  3. In a large bowl mix the milk, eggs, vanilla, sugar, and flour together. Then pour evenly over fruit and crust.
  4. Bake in the oven at 375 degrees for 35 to 40 minutes or until an inserted fork comes out clean.

Ingredients

  • 1 pound chicken breast boneless, skinless and cut into 4 individual cutlets
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Chipotle Blackberry Sauce
  • 4 teaspoons olive oil extra virgin
  • 1 medium shallot or sweet onion diced
  • 2 cups fresh blackberries
  • 1 chipotle pepper in adobe sauce (canned), diced
  • 2 teaspoons brown sugar
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon mint leaves minced

  1. Wash your hands and clean your preparation area. Preheat the oven to 375°F. Rinse any fresh fruits and herbs under cool running water to remove debris
  2. Sprinkle the salt and pepper on the chicken. In a nonstick pan heat up 2 teaspoons of the olive oil over medium-to-medium high heat. Place the chicken in the skillet and let brown for 3-5 minutes. Place chicken, browned side up, on a baking sheet.
  3. Bake for 20-25 minutes or until internal temperature has reached 165°F.
  4. While chicken is cooking in the oven, heat a 3-quart saucepan on medium-high heat. Add 2 teaspoons of olive oil and the diced shallots. Sauté for 3-4 minutes or until soft. Add blackberries, chipotle pepper, brown sugar, and balsamic vinegar. Bring to a boil, reduce heat, cover and simmer for 10 minutes.
  5. Remove sauce from heat and let cool for 5 minutes. Serve the sauce over the chicken and top with mint leaves.
