Butternut Squash Mac n Cheese

Mac n Cheese is a comfort food classic but allow us to dress up your mac n cheese with a winter favorite, butternut squash! The butternut squash and the blend of cheeses in this dish really make for a unique mac n cheese experience!

Ingredients
  • 8 ounces Elbow pasta
  • 2 teaspoons olive oil
  • 1 1/2 cups butternut squash fresh, cubed
  • 1/2 Tablespoon butter unsalted
  • 1 Tabblespoon olive oil
  • 3 Tablespoons flour
  • 3/4 cup Milk 1%
  • 1/2 cup reduced fat Mozzarella Cheese, shredded
  • 1/4 cup reduced fat cheddar cheese
  • 1/4 cup Asiago Cheese
  • 1/4 teaspoon salt
  • 1 teaspoon pepper

Instructions
  1. Wash your hands and workspace
  2. Bring a stockpot of water to boil. Cook pasta according to the package
  3. Cut your butternut squash into 1-inch pieces.
  4. In a separate saucepan, add your 2 teaspoons olive oil on medium heat. Add butternut squash into the pan and cover. Cook for about 5 minutes or until it is tender with a fork.
  5. Pour squash into a blender and puree
  6. In a saucepan, add your butter and 1 Tablespoon olive oil and melt. Once melted add in your flour and whisk continually, add your milk slowly to prevent clumping.
  7. Add your cheeses, butternut puree, and spices and mix well. Incorporate pasta elbows.
  8. Pour into a 9x9 glass pan and cook at 350*F for 20 minutes

Ingredients
  • 12 ounces whole wheat penne pasta dry
  • 10.75 ounces cream of chicken soup reduced sodium
  • 10.75 ounces cream of mushroom soup reduced sodium
  • 10 ounces diced tomatoes with green chiles
  • 1 red bell peper diced
  • 1 green bell pepper diced
  • 1/2 white onion diced
  • 4 ounces canned sliced mushrooms drained
  • 2 cups chicken breast chopped
  • 2 cups reduced fat shredded cheese

  1. Boil pasta in water for 5 minutes. Drain and place in slow cooker.
  2. Place all other ingredients in slow cooker. Combine well.
  3. Cook on Low for 2-3 hours. Stir before serving.

Ingredients
  • 2 cups tri-color cheese tortellini
  • 1/2 cup mozzarella cheese balled/cubed
  • 1 1/4 cup black olives canned, pitted and whole, reduced sodium
  • 1 cup cherry tomatoes
  • 1 Tablespoon olive oil
  • 1 Tablespoon fresh basil finely chopped
  • 1 Tablespoon fresh parsley finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

  1. Clean and sanitize your workspace. Pull back your hair, and wash your hands.
  2. Cook pasta according to package directions.
  3. In a bowl, mix mozzarella cheese with olive oil, basil, parsley, salt and pepper. Allow to marinate for at 15 minutes.
  4. Layer ingredients on bamboo skewers – (2) tortellini, (2) cheese, (4) olives, (4) tomatoes on each skewer. Repeat on each skewer.

This recipe features salmon and spring vegetables and flavors that all compliment each other. This light alternative to heavy pasta is perfect for the warming weather!

My family and I used to take big shopping trips to Houston once a year and we would eat at the same restaurant every time. This was my absolute favorite dish to get and when they took it off the menu I was devastated! I decided to try and recreate it and make a healthier version to share with you! It tastes the exact same!!! I hope you all enjoy as much as did for many years!

Ingredients
Pasta
  • 1 pound fresh Salmon filet
  • 1 pound bowtie pasta uncooked
  • 1 pound fresh asparagus spears trimmed and cut into 1 inch pieces
  • 2 cups frozen peas
Dressing
  • 1/4 cup olive oil
  • juice of 1 lemon
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup fresh dill chopped
  • 1/4 cup Parmesan cheese grated

  1. Wash your hands and clean your preparation area. Rinse asparagus spears under cool water.
  2. Preheat your oven to 400 Degrees F.
  3. Place salmon, skin side down, on a cookie sheet lined with aluminum foil and bake in the oven for 20 minutes or until salmon reaches a minimum internal temperature of 145 Degrees F.
  4. While the salmon is baking, whisk together the olive oil, lemon juice, salt, pepper, and dill in a small bowl.
  5. Boil a pot of water for pasta, cook pasta according to package directions. The last 3 minutes of the pasta boiling, add in the asparagus and peas. Drain and place in large serving bowl and toss with the olive oil dressing.
  6. Flake the salmon to pieces, removing from skin, and place in the serving bowl with the pasta. Toss to combine and coat with dressing. Serve immediately.

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon extra virgin olive oil
  • 16 ounces shelf stable gnocchi
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 1/4 cup water
  • 6 cups spinach chopped
  • 15 ounce diced tomatoes unsalted
  • 15 ounce unsalted white kidney beans drained, and rinsed
  • 1/3 cup part-skim mozzarella cheese shredded
  • 1/4 cup Parmesan cheese shredded

  1. Clean preparation area, wash hands
  2. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add gnocchi and cook, stirring often, until it is plumped and starting to brown; about 5-7 minutes. Place cooked gnocchi in a large bowl.
  3. Add 1 teaspoon of oil and onion to the pan and cook for 2 minutes. Stir in garlic and water. Cook until onion is cooked.
  4. Add spinach and cook by stirring until spinach begins to wilt
  5. Stir in tomatoes, beans, and simmer. Add gnocchi and sprinkle with both cheeses.
  6. Cook until cheese is melted and sauce is bubbling; about 3 minutes.
