Ingredients
  • 10 ounces whole wheat penne pasta
  • 2 Tablespoons olive oil
  • 1/2 cup diced yellow onion
  • 2 Tablespoons all-purpose flour
  • 1 cup water
  • 2 teaspoons chicken bouillon low sodium
  • 1/2 teaspoon garlic powder
  • 1 teaspoon poultry seasoning
  • 1/4 teaspoon black pepper
  • 1/2 cup skim milk
  • 4 ounces fat free cream cheese
  • 3 cups frozen mixed vegetables
  • 1 pound chicken breast diced and cooked (about 2 cups)

Instructions
  1. Start a large pot of water to boil. Once boiling add pasta and cook for 10 minutes or until tender. Drain and set aside.
  2. In a large skillet over medium heat add olive oil and sauté onions until translucent.
  3. Add flour until combined and then add 1 cup of water, chicken bouillon, garlic powder, poultry seasoning, and black pepper
  4. Once combined add milk and cream cheese. Stir to combine
  5. Add mixed vegetables and cooked chicken, and stir to combine
  6. Last add pasta to the chicken and vegetable mixture. Once everything is combined and hot it is ready to serve.

Ingredients
Flautas
  • 1.5 cups shredded skinless rotisserie chicken
  • 6 ounces fat free cream cheese
  • 1 teaspoon avocado oil for brushing
  • 8 5 inch corn tortillas
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • pepper to taste
Toppings
  • 1 medium Tomato diced
  • 1/2 medium onion diced
  • 2 Tablespoons cilantro chopped
  • 1 cup lettuce shredded
Servings: (2 flautas per serving)

Instructions
  1. Mix together the shredded rotisserie chicken, low-fat cream cheese, cumin, chili powder, garlic powder, onion powder, and salt and pepper.
  2. Place the corn tortillas in the microwave and heat for approximately 10-20 seconds. Remove the tortillas and ensure they are pliable for rolling. Allow for more time, if necessary.
  3. Once your tortillas are ready, place 3 tbsp of chicken mixture onto the end of a tortilla. Roll the tortilla tightly and place the flauta seam side down. Repeat the process until all flautas have been rolled. *Note: Use a wooden toothpick to secure the seam if necessary. Make sure to remove these before serving*
  4. Once the flautas are rolled (Or ready), place them side by side in your air fryer basket.
  5. Brush the tops of the flautas lightly with the avocado oil.
  6. Air fry for 6-8 minutes at 370 degrees, turning halfway through. Enjoy!

  • 12 ounces bow tie pasta
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 cup mushrooms chopped coarsely
  • 2 cups 2% milk
  • 4 ounces fat free cream cheese cubed
  • 1.5 cup pumpkin puree
  • 1/2 teaspoon salt
  • 1 teaspoon sage
  • 1/2 teaspoon thyme
  • 2 tablespoon fresh rosemary chopped

  1. Wash your hands and preparation area.
  2. Cook pasta according to package directions.
  3. In a large skillet heat up olive oil. Once heated add garlic and stir until aromatic. Add chopped mushrooms and stir until softened.
  4. Add milk and cream cheese and stir until cream cheese is melted.
  5. Add pumpkin and spices and stir until well combined, heated through, and aromatic.
  6. Add pasta and stir until pasta is coated. Serve immediately.

Ingredients
  • 1 pound lean ground turkey
  • 1 large onion chopped
  • 1 large green bell pepper chopped
  • 1 8 ounce package fat free cream cheese
  • 1 teaspoon chili powder
  • 1 10 ounce can enchilada sauce
  • 6 corn tortillas
  • 1 cup reduced-fat shredded Mexican blend cheese

  1. Wash your hands and clean your preparation area. Rinse fresh vegetables under cool running water before slicing. Preheat oven to 400 degrees F.
  2. In a large skillet, cook the ground turkey, onion, and pepper over medium heat until meat is no longer pink; drain.
  3. Stir in cream cheese and chili powder. Pour enchilada sauce in a shallow bowl. Dip tortillas in sauce to coat.
  4. Place two tortillas in a 13 X 9 inch baking dish coated with cooking spray; spread with half of the beef mixture.
  5. Sprinkle with 1/3 cup cheese.
  6. Repeat layers.
  7. Top with remaining tortillas and cheese.
  8. Bake uncovered for 20-25 minutes or until heated through and cheese is melted.
  9. Let stand 10 minutes before serving.

Ingredients
  • 4 cups cauliflower florets
  • 4 cups broccoli florets
  • 1/2 cup water
  • 1/4 cup skim or 1% milk
  • 4 ounces fat free cream cheese cubed
  • 1/2 cup plain, fat-free yogurt
  • 1 cup reduced-fat, shredded sharp cheddar cheese
  • 10 low-sodium saltine crackers crushed (about 1/3 cup)
  • 2 tablespoons grated or shredded Parmesan cheese

  1. Rinse broccoli and cauliflower. Cut into florets.
  2. Place vegetables and ½ cup water in skillet.
  3. Cover with lid and allow to steam over high heat for 3 minutes or until tender.
  4. Add milk to skillet. Reduce to low heat.
  5. Cut cream cheese into cubes and add to skillet.
  6. Allow cream cheese to melt. Stir occasionally.
  7. Add yogurt to skillet. Stir to coat.
  8. Sprinkle with shredded cheddar cheese and allow it to melt.
  9. Mix cracker crumbs and Parmesan; sprinkle over vegetables.
