Ingredients
  • 1.5 pounds medley baby potatoes sliced in half
  • 2 Tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 teaspoon Italian herb blend no salt added

  1. In a medium bowl combine the halved baby potatoes and the olive oil until well coated.
  2. Add the spices and toss until potatoes are well coated.
  3. Arranged potatoes in air fryer basket in a single layer.
  4. Air fry at 400 Degrees for 14 minutes, shaking halfway through.
  5. Serve.

Ingredients
  • 2 Tbsp Avocado Oil
  • 1 Tbsp garlic Minced
  • 1/4 Cup onion Diced
  • 1/2 Cup carrot Diced
  • 2 Stalks celery Diced
  • 2 Tbsp tomato paste
  • 1/4 Cup tomato sauce no salt added
  • 1 1/4 Cup Brown dry lentils
  • 14.5 Oz Canned Potatoes Drained
  • 2 Cups water
  • 2 Cups low sodium chicken broth no sugar added option
  • 1/2 Tsp black pepper
  • 1/2 Tsp dried oregano
  • 1 Tsp cumin
  • 3 Cups baby spinach leaves

Instructions
  1. In a large pot, add avocado oil. Add in the garlic, diced onion, diced carrot, and diced celery. Cook for 2-3 minutes until carrots and celery are soft, stirring frequently.
  2. Add tomato paste, tomato sauce, and lentils to the pot and combine with the carrot and celery mixture. Cook for 1 minute.
  3. Add canned potatoes to the pot.
  4. Pour in 2 cups water and 2 cups chicken broth.
  5. Add in black pepper, oregano and cumin. Stir to combine, cover, and bring to a boil.
  6. Reduce heat to medium low and simmer for 25 minutes until lentils are cooked.
  7. With a handheld emulsion blender, briefly emulsify about ¼ of the soup in the pot while leaving the texture chunky. If using a regular blender, remove ¼ of the soup and add the blender. Blend until smooth and place back in the pot.
  8. Stir in spinach leaves into the soup and let simmer for 5 more minutes or until spinach is wilted.

Ingredients
  • 2 pounds Yukon Golden Potatoes peeled, cut into 1 inch rounds
  • 3 cloves garlic peeled
  • 1 cup low sodium chicken broth
  • 1/2 cup low-fat Greek Yogurt
  • 1 Tablespoon unsalted butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

  1. Peel and rinse potatoes, cut into 1-inch size rings.
  2. Arrange potato pieces at the bottom of the instant pot in an even layer. Add whole garlic and chicken broth over the potatoes.
  3. Close the lid of your cooker set the steam release valve to a sealed position.
  4. Press MANUAL or PRESSURE COOK button for 12 minutes on HIGH PRESSURE.
  5. Quick-release after the alarm sounds, carefully remove the lid.
  6. Mash the potatoes and garlic together. Add the yogurt, butter, salt, and pepper, combine well.

Ingredients
  • 1/2 pound ground turkey
  • 1/2 red bell pepper chopped
  • 1 clove garlic minced
  • 3 Tablespoons green onion chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 2 cups liquid egg product
  • 1/4 cup reduced fat, mexican blend cheese shredded

  1. Wash your hands and clean your preparation area. Rinse any vegetables before sicing. Preheat the oven to 350 F. Coat a muffin tin with nonstick cooking spray.
  2. In a large skillet, sauté the ground turkey, bell pepper, garlic, and green onion until the turkey is fully cooked and reaches 165°F and vegetables are tender. Add the salt, pepper, cumin and chili powder; cook for 1-2 minutes. Remove from heat.
  3. In the muffin tin, evenly divide the turkey and vegetable mixture among 10 individual muffin cups.
  4. Pour the eggs evenly into the 10 stuffed cups. Top with cheese.
  5. Bake 20 minutes or until the eggs are set.
  6. Portion the egg muffins out into serving sizes and store in the refrigerator for 3-4 days or in the freezer up to 3 months. If frozen, thaw in the refrigerator the night before and heat in the microwave when ready to serve. Reheat to 165°F before eating.

  • 4 russet potatoes
  • olive oil for brushing
  • herbs to taste

Instructions
  1. Scrub potatoes under cool running water and let dry.
  2. Prick each potato at least 8 times.
  3. Lightly brush each potato with olive oil, season with herbs of your choice. Be ware of adding too much sodium to your potatoes!
  4. Individually wrap each potato in foil (wrap tightly).
  5. Place in slow cooker and don't overfill.
  6. Cook on low for 8 hours or until tender when pressed with a mitten. Caution: potatoes will be hot when removed from slow cooker.
