Strawberry Spinach Salad with Feta

Ingredients
  • 1 tbsp Poppy seeds
  • 1/2 cup artificial sucralose
  • 1/2 cup olive oil
  • 1/4 cup Vinegar
  • 1/4 tsp Worcestershire sauce
  • 3 cups spinach rinsed and torn into bite-size pieces
  • 2 cups strawberries cleaned, hulled and sliced
  • 1/4 cup almonds slivered
  • 1/2 cup Feta nonfat

Instructions
  1. In a medium bowl, whisk together the poppy seeds, sugar, olive oil, vinegar and Worcestershire sauce. Cover and chill if desired.
  2. In a large bowl, combine the spinach, strawberries and almonds. Toast the almonds for added flavor if desired.
  3. Pour dressing over salad, and toss. refrigerate 10-15 minutes before serving.

Ingredients
  • 5 cups spring mix salad greens
  • 1 1/2 cups cubed cooked chicken breast
  • 1 1/4 cup sliced fresh strawberries
  • 2 medium kiwi peeled and sliced
  • 1 large apple cored and chopped
  • 1/4 cup reduced fat feta cheese crumbles
  • 1/4 cup poppy seed dressing fat-free preferred

  1. Arrange salad greens evenly on each of 4 plates.
  2. Divide chicken, strawberries, kiwi, apple and cheese over greens.
  3. Drizzle evenly with salad dressing.
  4. Serve immediately.

Ingredients
  • 1 lb fresh strawberries
  • 1 1/4 cup low fat vanilla yogurt
  • 3 tbsp confectioners' sugar
  • 2 tbsp orange juice concentrate
  • 1/8 tsp almond extract

  1. Wash strawberries and remove stem top. In a blender, add all ingredients; cover and process until smooth. Garnish as desired.

Red, White and Blue Fruit Salad

Jicama is a root vegetable that resembles a turnip. This vegetable is usually eaten raw and is a great alternative for chips. Season jicama with chili powder and a dash of salt for dips or dice them for salads.

Ingredients
Dressing
  • 3 Tablespoons lime juice
  • 2 teaspoons honey
  • 1 Tablespoon fresh mint chopped
  • 1 cup strawberries diced
  • 1 cup fresh blueberries
  • 3/4 cup jicama diced

  1. Whisk lime juice, honey and fresh mint into a small bowl.
  2. Place all fruit in large bowl and pour dressing over fruit. Cover and refrigerate for at least 1 hour and enjoy!
How to cut Jicama
  1. You will need a sharp knife, cutting board, vegetable peeler.
  2. Wash and peel jicama with a vegetable peeler.
  3. Cut 1/4 of an inch slices of the jicama and then cut those slices into matchsticks. You can then use these to dip into guacamole or other dips instead of chips or dice them to use in salads.
