Lemon-Blueberry Salad
This easy and fresh recipe for Lemon-Blueberry Salad, which features spinach, kale, and blueberries, is the perfect quick side dish for those busy back-to-school nights.
It includes a bright and flavorful, “make-your-own-dressing” and includes a healthful variety of fruits and vegetables. It’s easy and simple that you can make it any night of the week, and delicious enough for weekend entertaining.
- 6 cups mixed greens (spinach, kale, and lettuce) pre-washed
- 1 teaspoon olive oil
- juice of 1/2 lemon
- Zest of 1 lemon
- 1 cup fresh blueberries washed
- 6 tablespoons goat cheese crumbled
- Wash your hands and clean your food preparation area.
- Wash all produce and fruits before preparing the salad.
- Place the mixed greens in a bowl. (If you don’t have mixed greens, use what greens you have on hand.)
- Toss with olive oil, lemon zest, lemon juice, and blueberries.
- Divide among 6 servings and top each serving with 1 tablespoon of goat cheese.
Fresh Berry Caprese Salad
This simple yet fresh Berry Caprese Salad is a perfect salad for when strawberries and blueberries are in season. Can be eaten as a side dish or have grilled chicken added to it to make it a main dish. Enjoy one of our favorite summer inspired salads!
- 1/2 Cup balsamic vinegar
- 2 Cup fresh strawberries sliced
- 1 Cup fresh blueberries
- 1/2 Cup fresh basil chopped
- 1 Cup fresh mozzarella cubed
- 1/4 Cup sliced almonds
- 1 Tablespoon olive oil
- 6 Cup Spring Mix Salad
- Pour balsamic vinegar into a small saucepan. Bring to a gentle boil over low heat; cook 15 minutes or until reduced to a thick glaze. Allow to cool.
- Place strawberries, blueberries, mozzarella, almonds and basil on top of spring mix salad. Drizzle with olive oil and balsamic glaze.

Chipotle Chicken Taco Salad
The perfect zesty salad for your next dinner, or make it for lunches for the week ahead!
- 1/3 cup chopped fresh cilantro
- 2/3 cup fat-free sour cream
- 1 tablespoon minced chipotle chile canned in adobo sauce
- 1 teaspoon cumin ground
- 1 teaspoon chili powder
- 5 teaspoons fresh lime juice
- 1/4 teaspoon salt
- 4 cups shredded romaine lettuce
- 2 cups roasted boneless, skinless chicken breast chopped
- 1 cup cherry tomatoes halved
- 1/2 cup diced peeled avacado
- 1/3 cup thinly vertically sliced red onion
- 1 (15- ounce) can low sodium black beans, rinsed and drained
- 1 (8 3/4-ouce) can no-salt-added whole-kernel corn, rinsed and drained
- To prepare dressing, combine first 7 ingredients, stirring well.
- To prepare salad, combine lettuce and remaining ingredients.
- Drizzle dressing over salad; toss gently to coat. Serve immediately.
