Ingredients
  • 4 medium tomatoes
  • 6 apricots
  • 1/2 medium red onion
  • 1/4 cup red wine vinegar
  • 1 1/2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1/3 cup goat cheese crumbles
  • 1/4 cup almonds sliced

Instructions
  1. Wash your hands and clean your preparation area. Rinse all fruits under cool running water to remove dirt and debris.
  2. Slice tomatoes and apricots into bite-sized wedges and place in a large bowl.
  3. Slice the red onion into very thin strips and place them in the bowl as well.
  4. In a small bowl, combine the vinegar, honey, and mustard until smooth and combined. Pour vinegar dressing over the tomato combination and stir to evenly distribute.
  5. Top with goat cheese and almonds just before serving.

Ingredients
  • 4 cups arugula
  • 4 tablespoons Balsamic Vinaigrette
  • 1 cup strawberries sliced into quarters
  • 6 medium figs sliced into quarters
  • 1/4 cup pecans chopped & toasted

  1. Wash hands and clean preparation area. Rinse all fruits and vegetables under cool running water before use.
  2. Toss the arugula and balsamic vinaigrette together in a large bowl to coat evenly. Arrange the arugula in bowls.
  3. Divide the sliced strawberries and figs among your servings. Top with the toasted pecans.
  4. Serve immediately.

Ingredients
  • 1 pound okra fresh
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin

  1. Wash hands and clean preparation area. Rinse okra under cool running water to remove dirt.
  2. Preheat oven to 400 degrees F.
  3. Trim the tough stem end of okra pod off and then slice the okra pod in half lengthwise.
  4. Place the sliced okra pods in a bowl, pour olive oil on top and stir to coat.
  5. Sprinkle seasonings on the okra pods and stir to coat evenly.
  6. Spread seasoned okra pods in a single layer on a baking sheet. Bake for 15-20 minutes depending on personal preference of vegetable doneness.

Charro beans are a stewed pinto bean soup authentic to Mexican Cuisine. The pinto beans are flavored with bacon, chiles, spices, and vegetables. These beans are great as a side to any taco recipe! Store in a sealed container for 3-4 days in the refrigerator or freeze for up to 3 months.

Ingredients
  • 1 pound dried pinto beans
  • 6 ounces center cut reduced fat bacon, chopped
  • 1 small onion chopped
  • 1 jalapeno seeded and minced (optional)
  • 4 garlic cloves minced
  • 1 14 ounce can diced tomatoes
  • 3 cups low sodium chicken broth
  • 3 cups water
  • 2 teaspoons chili powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/2 cup of cilantro chopped

  1. Sort dried beans to remove debris. Using colander, rise well under cold running water.
  2. Set the cooker to sauté setting, cook the bacon until crisp. Remove the bacon from the cooker and place on a paper towel lined plate to drain excess fat. Leave remaining fat in pot.
  3. Add the onions and jalapeno (optional) into the cooker. Sauté stirring often, until the onions become translucent (2-3 minutes). Add the garlic and cook for no more than a minute.
  4. Press the keep warm/cancel button on the multifunction cooker. Stir in the beans, canned tomatoes with juices, broth, water, chili powder, black pepper, salt, bacon, and cilantro.
  5. Close the lid and cook on high pressure for 45 minutes. Once the cooking cycle is complete, allow the pressure to release naturally for 45 minutes. Release any pressure manually before opening lid.

Bacon wrapped Asparagus is a two-ingredient side dish (yes I said TWO) that is so simple but it will look like it came from the kitchen of a 5 star restaurant! Perfect for a romantic dinner or just to bribe someone to get them to eat asparagus!

  • 1.5 pounds asparagus stalks trimmed
  • 4 strips low sodium bacon

Oven Instructions
  1. Wash hands and clean preparation area, preheat the oven to 400 Degrees F.
  2. Rinse asparagus under cool running water and trim tough woody ends off of the asparagus stalks.
  3. Divide the asparagus stems into 8 equal bunches, set aside.
  4. Cut the 4 strips in bacon in half, to create 8 shorter strips.
  5. Wrap the bacon around the center of each asparagus bundle.
  6. Bake in the oven for 15 minutes, switch the oven to high broil, and broil for 3-5 or until bacon is crispy.
Air Fryer Instructions
  1. Wash your hands and clean preparation area.
  2. Set the air fryer to 350°F and preheat for 3 minutes.
  3. Rinse asparagus under cool running water and trim tough woody ends off of the asparagus stalks.
  4. Divide the asparagus stems into 8 equal bunches, set aside.
  5. Cut the 4 strips in bacon in half, to create 8 shorter strips.
  6. Wrap the bacon around the center of each asparagus bundle.
  7. Place bundles on the air fryer basket/tray.
  8. Cook asparagus and bacon bundles for 10-15 minutes or until bacon is crispy. Rotate bundles every 5 minutes to allow for even cooking.
