Ingredients
  • 2 cups green apples rinsed and diced
  • 2 cups strawberries rinsed and thinly sliced
  • 2 cups blueberries rinsed
  • 1 cups cherries rinsed, pitted and sliced
  • 1/2 cup pomegranate arils
  • 1 tablespoon fresh mint chopped
  • 2 tablespoon lime juice
  • 2 tablespoon honey

  1. Combine fruit in a large bowl.
  2. Sprinkle chopped mint over fruit
  3. Drizzle with honey and lime.
  4. Toss to combine
  5. Store in the refrigerator.

Ingredients
  • 2 pounds asparagus rinsed and trimmed
  • 1 tablespoon olive oil
  • 1/4 cup grated parmesan
  • 1/4 cup whole wheat panko bread crumbs
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika

  1. Heat oven to 350 degrees.
  2. Place asparagus into a large baking dish and drizzle olive oil evenly over asparagus
  3. Roast asparagus for 15-20 minutes until tender.
  4. While asparagus is roasting, combine panko bread crumbs, paprika, onion powder, and parmesan cheese.
  5. Remove asparagus from oven and lightly sprinkle with seasoned bread crumb mixture.
  6. Return to oven for 5 more minutes, or until bread crumbs begin to lightly brown. Remove from oven and serve.

  • 1 pound brussels sprouts sliced
  • 2 cups cooked quinoa cooled
  • 1 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts
  • 2 tablespoons agave
  • 1 fresh squeezed orange
  • 1 tablespoons extra virgin olive oil
  • 1/8 tsp salt
  • 1/8 tsp pepper

  1. Clean prep area, wash hands, and wash produce.
  2. Slice brussels sprouts
  3. Whisk together dressing ingredients: agave, fresh squeezed orange juice, olive oil, salt, and pepper; set aside

Ingredients
  • 6 cups fresh baby spinach
  • 4 Kiwi fruit peeled, cubed
  • 1 cup mandarin oranges canned in juice, drained
  • 1 cup pecans chopped
  • 2 tablespoon nonfat vanilla, Greek yogurt
  • 2 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoon honey
  • 1 teaspoon Poppy seeds

  1. Wash your hands and clean your preparation area.
  2. Wash kiwi fruit with a soft bristle brush and rinse and dry spinach in a colander.
  3. Place spinach in a large serving bowl. Add kiwis, mandarin oranges, and pecans evenly on top of spinach.
  4. In a bowl or jar with a lid add the yogurt, lemon juice, olive oil, honey and poppy seeds.
  5. Whisk or shake dressing mixture until well combined.
  6. Pour over the spinach and fruit.
  7. Serve immediately.

Vinaigrette Dressing
  • 2 tablespoons Agave syrup
  • 1 lime juice fresh squeezed
  • 1 tablespoon extra virgin olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
Salad
  • 4 cups seedless watermelon diced
  • 4 cups fresh spinach
  • 1 1/2 cup cucumber diced
  • 1/4 cup fresh mint leaves torn
  • 1/3 cup fresh basil leaves torn
  • 1/3 cup reduced fat feta cheese crumbles

  3. In a small bowl, add agave, lime, oil, salt, and pepper and whisk together.
