Ingredients
  • 1 pound Slow Cooker French Onion Roast
  • 1 cups low-sodium beef broth
  • 8 ounces egg noodles cooked
  • 4 ounces light cream cheese
  • 1/2 cup parsley chopped

Instructions
  1. Begin cooking the egg noodles according to package directions, omitting added salt.
  2. In another pot over medium heat, begin to reheat Slow Cooker French Pot Roast adding the beef broth, bring to a simmer.
  3. Add in the cream cheese and stir until the cream cheese is completely combined with the beef.
  4. Once the noodles are cooked, drain and add to the beef, fold until the noodles are coated.
  5. Serve topped with fresh chopped parsley.

Ingredients
  • 2 teaspoons olive oil
  • 4 medium yellow onion sliced thin
  • 2 Tablespoons water
  • 2 Tablespoons minced garlic
  • 4 pound beef chuck roast fat trimmed
  • 1/3 cup balsamic vinegar
  • 2 cups low-sodium beef broth
  • 2 Tablespoons Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 Tablespoons resh thyme

Instructions
  1. In a skillet heat the olive oil over low to medium heat, add the onions and cook until the onions are almost caramelized. Use up to 2 tablespoons of water to help in the cooking process if onions start to stick to the pan. This takes about 30-35 minutes.
  2. In a slow cooker place the beef roast, caramelized onion, and garlic.
  3. Add the balsamic vinegar, beef broth, worcestershire sauce, salt, pepper and fresh thyme.
  4. Cook on high for 4-6 hours or on low for 8-10 hours.
  5. Note: the onions can be caramelized the day before and stored in the refrigerator until ready to add to the slow cooker.

Ingredients
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 cup yellow onion diced
  • 3 cloves garlic minced
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon dried oregano
  • 1 cup long grain dry, white rice
  • 15 ounce can low sodium black beans drained and rinsed
  • 4 ounce can diced green chilis
  • 15 ounce can no sodium added diced tomatoes
  • 2 cups low-sodium beef broth
  • 1 1/2 cups frozen corn
  • 1 cup shredded low-fat cheese
  • 2 cups shredded lettuce

Instructions
  1. Press the sauté button on the multi-function cooker. Once hot add oil and ground turkey, onion and garlic. Cook until turkey is cooked, and onions are softened.
  2. Add onion powder, paprika, chili powder, cumin, oregano. Stir to mix.
  3. Add in the rice, black beans, green chilis, diced tomatoes, beef broth, and frozen corn. Mix to combine.
  4. Put the lid on the multi-function cooker and set to manual, high pressure and time for 8 minutes.
  5. Once the time is done use the quick release function and once the pressure has dropped, open and fluff the rice.
  6. Top each serving with 1 ½ tablespoons of cheese and 3 tablespoons of shredded lettuce

This hearty comfort food is perfect any time of the year.

Ingredients
  • 1 pound lean ground beef 97/3
  • 1 cup green bell pepper chopped
  • 1 cup yellow onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons jalapeno pepper diced (approximately ½ medium jalapeno pepper)
  • 15 ounce can no-salt-added diced tomatoes
  • 15 ounce can no salt added tomato sauce
  • 15 ounce can low sodium pinto beans drained and rinsed
  • 15 ounce can low sodium black beans drained and rinsed
  • 1 cup low-sodium beef broth
  • 2 teaspoon ground chili pepper
  • 2 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 cup lowfat cheddar cheese shredded

Instructions
  1. Wash your hands and clean your preparation area. Rinse fresh vegetables under cool running water and rinse can lids before opening.
  2. In a medium skillet brown the ground beef along with the bell pepper, onion, jalapeno and garlic. Once ground beef is browned add it to the slower cooker.
  3. To the slow cooker, add the diced tomatoes, tomato sauce, pinto and black beans, beef broth, chili pepper, cumin, paprika, and oregano. Stir to combine.
  4. Turn slower cook on HIGH for 4 to 6 hours to cook or LOW for 8 to 10 hours to cook.
  5. To serve top each serving of chili with 2 tablespoons of cheddar cheese.

Ingredients
  • 8 ounces ground beef 97% lean
  • 8 ounces ground pork 96% lean
  • 1 tablespoon dried parsley
  • 3 tablespoons minced garlic divided
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 medium yellow onion chopped
  • 2 medium celery stalks chopped
  • 2 medium carrots chopped
  • 4 cups low sodium chicken broth
  • 4 cups low-sodium beef broth
  • 4 ounces dry orzo
  • 3 cups kale destemmed and chopped
  • 1/2 cup reduced-fat parmesan cheese, grated

  1. In a large pot, brown the beef and pork together over medium heat. Add parsley, 1 tablespoon of garlic, oregano and black pepper. Once meat is completely cooked, remove and set aside.
  2. Using the fat from the meat, sautee the onion, celery, carrots, and remaining garlic. Once vegetables are softened, add in the broth and bring to simmer.
  3. Add in the pasta and let simmer for 5-6 minutes. Add in the kale and browned meat let simmer for 4-5 minutes.
  4. Serve topped with parmesan cheese.
