Ingredients
  • 1 12 ounce can light tuna packed in water, drained
  • 1/2 cup reduced fat cheddar cheese shredded
  • 1 stalk celery chopped
  • 1 Tablespoon dehydrated minced onion
  • 1/4 teaspoon pepper
  • 1/4 cup reduced fat mayonnaise with olive oil
  • 1/2 Tablespoon lemon juice fresh
  • 8 slices 100% whole grain bread

Instructions
  1. Preheat oven to 350Ëš F. Drain tuna and break the meat apart with a fork.
  2. Mix tuna, cheese, celery, light mayonnaise, onion, salt, and pepper in a medium mixing bowl.
  3. Spread the tuna mixture on 4 of the pieces of whole wheat bread and place a single slice of bread on top of each.
  4. Put each sandwich either on a cookie sheet or on a square of aluminum foil, wrapping the foil around the sandwiches and folding edges securely.
  5. Bake for about 20 minutes or until hot in the middle. Cool slightly before serving. Use the broiler to toast the bread if desired.

Ingredients
  • 12 ounces rotini pasta
  • 1 cup thinly sliced celery
  • 1 cup diced red onion
  • 2 ounces low sodium ham cooked, diced
  • 1 1/2 cups frozen green peas cooked until just tender
  • 1/2 cup reduced fat mayonnaise with olive oil
  • 1/2 cup light ranch dressing
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon ground pepper

  1. Clean your area and wash your hands before you begin.
  2. Cook rotini in boiling salted water just until tender, about 12 to 15 minutes.
  3. Rinse under cool running water, drain, and transfer to a large bowl.
  4. Stir in all remaining ingredients.
  5. Cover and chill for 20 to 30 minutes or overnight.

  • 1/2 cup red grapes halved if large
  • 1 1/2 cups cooked chicken breast skinless, diced
  • 1 celery stalk, chopped
  • 2 1/2 tablespoons plain nonfat Greek yogurt
  • 2 tablespoons reduced fat mayonnaise with olive oil
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon curry powder
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 each 100% whole wheat pita pockets cut in half
  • 4 pieces leaf lettuce
  • 1 tablespoon sliced almonds

  1. Clean your area and wash your hands before you begin.
  2. Combine grapes, chicken breast, celery in a large bowl. Set aside.
  3. In another bowl, combine yogurt, mayonnaise, chili powder, curry powder salt and pepper.
  4. Mix yogurt sauce with chicken mixture and add almonds. Place 1/2 cup salad in each pita pocket with 1 piece leaf lettuce.

Ingredients
  • 1 cup instant brown rice dry
  • 1 cup water
  • 1 1/4 pound boneless, skinless chicken breast
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Non stick cooking spray
  • 1/3 cup shredded reduced fat swiss cheese
  • 1/2 cup reduced fat mayonnaise with olive oil
  • 1/4 cup skim milk
  • 1 (12 ounce) bag frozen broccoli florets
  • 1/3 cup diced roasted red pepper

  1. Cut chicken into bite size pieces and season with salt and pepper.
  2. Heat large nonstick skillet with a lid, coated with cooking spray, to medium-high heat.
  3. Add chicken, stirring occasionally, until cooked through. Remove chicken pieces from the pan and set aside to rest.
  4. In the skillet prepare rice according to package directions omitting any added salt and fat.
  5. While the rice is cooking, steam broccoli according to directions on bag.
  6. Once the rice is cooked, stir in the swiss cheese, mayonnaise, and milk.
  7. Fold in broccoli, roasted red pepper, and chicken and bring to 165 Degrees F. Enjoy!
