Ingredients
  • 1 pound Slow Cooker French Onion Roast
  • 1 refrigerated pizza crust
  • 1/3 cup shredded gruyere cheese
  • 2 Tablespoons egg beaten

Instructions
  1. Preheat the oven to 400 Degrees F.
  2. Reheat the roast and onions in the microwave and shred if needed.
  3. On a nonstick surface or a clean countertop with flour roll out the pizza dough into a large rectangle.
  4. Cut the dough into 6 evenly sized squares using a butter knife.
  5. In the middle of each square place a scoop of the beef and onions. Place the shredded cheese evenly on top of the beef.
  6. Fold over the dough from one corner to the other, use a fork to press and seal the beef inside the dough.
  7. Place the pockets on a parchment paper covered baking sheet and brush the beaten egg on top of the dough.
  8. Bake for approximately 15 minutes.
  9. Remove from oven and enjoy!

Ingredients
  • 2 servings Homemade Pesto
  • 1/4 cup roasted red peppers
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion chopped
  • 1/2 cup Asparagus spears sliced on bias (about 4 spears)
  • 1/2 cup carrots sliced in rounds
  • 1/4 cup mozzarella cheese shredded, low sodium
  • 1 flatbread
  • 2 Tablespoons fresh basil for garnish

Instructions
  1. Preheat oven to 425 degrees and rinse all fresh vegetables under cool running water before preparing.
  2. Prepare pesto according to recipe directions https://dinnertonight.tamu.edu/recipe/pesto/.
  3. Prepare all toppings - roasted red peppers, cherry tomatoes, red onion, asparagus, carrots, mozzarella cheese and garnish
  4. Lay flatbread on non stick baking sheet. Spread made pesto on flatbread leaving about Β½ inch along the edge.
  5. Layer the vegetable toppings on top of pesto on flatbread. Sprinkle half of mozzarella and save the rest for topping after baking.
  6. Bake in the oven for 20 minutes until edges are brown and crispy and vegetables are softened but still have a little firmness to them.
  7. Remove flatbread from the oven and sprinkle the remaining mozzarella cheese and basil leaves for garnish. Enjoy!

Ingredients
  • 2 large eggs
  • 1 overripe banana mashed
  • 1 cup fresh spinach
  • 1 cup grated carrots
  • 1/4 cup Avocado Oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons apple cider vinegar
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup cocoa powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips

  1. Preheat your oven to 350 ℉ and spray a 12-hole muffin tin with baking spray. Set aside.
  2. In a food processer, combine eggs, banana, spinach, carrots, oil, maple syrup, vanilla, and vinegar. Blend until mixture is smooth.
  3. Add flour, baking soda, baking powder, cocoa powder, cinnamon, and salt. Process until just mixed.
  4. Fold in chocolate chips. Portion batter into prepared muffin tin. Bake for 20-22 minutes or until a toothpick inserted into the middle comes out clean. Let cool in pan for 5 minutes before transferring to a cooling rack.

Ingredients
  • 1 pound ground turkey breast
  • 32 ounce frozen tater tots
  • 1 cup butternut squash cubed
  • 1 cup unsalted beef stock
  • 1 cup fat-free milk
  • 1 medium bell pepper chopped
  • 1/2 cup yellow onion chopped
  • 1/2 cup celery chopped
  • 8 ounce fresh mushrooms sliced
  • 2 tablespoons parsley dried
  • 2 tablespoons flour
  • 1 tablespoon minced garlic
  • 1 tablespoon thyme dried
  • 1 tablespoon olive oil

  1. Clean and wipe your area.
  2. Preheat oven to 400 degrees.
  3. Coat a 9X13 pan with cooking spray
  4. Heat 1 tablespoon olive oil in a large skillet over medium high heat
  5. Add ground turkey and break up with a spoon.
  6. When meat is starting to brown, add all of the vegetables to the pan.
  7. Continue cooking until turkey is no longer pink and onions are translucent.
  8. Sprinkle flour over mixture and stir to combine.
  9. Gradually stir in beef stock and then milk.
  10. Stir in thyme and parsley.
  11. Bring to a bubble and continue cooking, stirring until sauce has thickened.
  12. Pour mixture into prepared pan.
  13. Top with tater tots.
  14. Bake in preheated oven for 20-30 minutes until sauce is bubbly and tater tots are browned and crispy.

Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/4 cups skim milk
  • 1 medium egg
  • 1/2 cup applesauce unsweetened
  • 4 ounces ham diced, no sugar added
  • 1/2 cup sharp cheddar cheese shredded, reduced fat

  1. Clean hands and surfaces. Combine flour and baking powder in a medium-sized bowl.
  2. In another bowl, combine milk, 1 egg, and applesauce together.
  3. Create a well in the center of the flour mixture. Pour the liquid mixture into the middle and whisk. The batter will be thick.
  4. Fold in diced ham and shredded cheese.
  5. Heat a skillet or griddle to medium heat, and spray cooking spray before pouring batter.
  6. Use the ΒΌ of a measuring cup to scoop out the batter. Pour onto the hot skillet or griddle.
  7. Cook on each side for 2-4 minutes until golden brown.
