Ingredients
  • 1 cup fresh pineapple cubed
  • 1 cup fresh strawberries sliced
  • 1 cup frozen mango cubed
  • 1/2 cup blueberries halved
  • 2 tablespoons lime juice
  • 1 teaspoon Tajin Classico seasoning
  • 4 Whole Wheat Carb Balance tortillas (6 inch)
  • 1 1/2 teaspoon sugar
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons butter and margarine blend

Instructions
  1. Wash your hands and clean your preparation area.
  2. Wash and prepare fruit, combine in a bowl.
  3. Add lime juice, sprinkle with Tajin, and mix.
  4. Refrigerate fruit mixture until ready to serve.
  5. Mix cinnamon and sugar together in a small bowl, set aside.
  6. Lightly butter each tortilla with the butter/margarine blend.
  7. Heat tortillas in a skillet on both sides until browned.
  8. Remove tortillas from the skillet and sprinkle with cinnamon sugar mixture.
  9. Fill each tortilla with fruit mixture and serve immediately.

Ingredients
  • 1/2 cup Dragon Fruit Frozen, Cubed
  • 1/2 cup mango Frozen, Cubed
  • 1 cup Unsweetened Vanilla Almond Milk
  • 1 scoop Vanilla Protein Powder (approx. 30 grams)
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon chia seeds

  1. Clean and prepare your area wash your hands before you begin.
  2. Add dragon fruit, mango, almond milk, protein powder, and vanilla extract to a blender. Blend until well combined.
  3. Once blended, serve smoothie in a cup, top with (or mix in) chia seeds, and enjoy!
  4. Note: Clean area quickly as natural dragon fruit color can stain surfaces and other areas.

Ingredients
  • 0.5 ounce instant vanilla pudding sugar free, fat free
  • 1/2 cup milk skim
  • 2 cups whipped topping fat free
  • 3 Tablespoons coconut flakes unsweetened
  • 1 1/2 cups pineapple frozen, cubed
  • 1 1/2 cups mango frozen, cubed
  • 1 cup bananas frozen, cubed
  • 1 1/2 cups peaches frozen, cubed
  • 3 Tablespoons pecans chopped

  1. Clean and prep your area.
  2. Remove fruit and whipped topping from the freezer and thaw to your liking.
  3. Add your pudding mix and skim milk to a large bowl and mix until well combined and there are minimal lumps.
  4. Once the pudding is done, add the whipped topping to the bowl. Fold pudding and whipped topping to combine.
  5. Next, add in the coconut flakes, thawed pineapple, mango, bananas, and peaches, and mix all together.
  6. Top off the fruit salad with chopped pecans and serve.
  7. Note: Fruit salad can be served as is or frozen to eat at an ice cream consistency. Fruit salad stores well in the refrigerator for 2 days (more time may experience the separation of ingredients) or in the freezer for 1 week.

  • 3 mangos chopped
  • 1 red bell pepper chopped
  • 2 jalapenos seeded and chopped
  • 1/2 cup red onion chopped
  • 1/2 cup cilantro chopped
  • Juice of 1 lime
  • 6 ounces tortilla chips lowfat, unsalted

  1. Wash your hands and clean your preparation area and rinse the mangos, peppers, cilantro under cool running water before chopping.
  2. Combine all ingredients, except tortilla chips, into a bowl.
  3. Serve with tortilla chips and refrigerate leftover salsa.
