Meatball Orzo Soup

Whether you are trying to stay warm on these cool spring days or just wanting the flavors of your favorite pasta dish, this Meatball Orzo Soup is what’s for dinner. Using frozen meatballs helps to get dinner on the table faster for those busy spring evenings. Leftovers are perfect the next day to be packed for lunch with a salad.

Ingredients
  • 1 tablespoon olive oil
  • 1 cup yellow onion chopped
  • 2 carrots diced
  • 2 stalks celery diced
  • 2 cloves of garlic minced
  • 12 ounces frozen turkey meatballs thawed and cut in half
  • 1 quart chicken stock – no salt added
  • 15 ounce can crushed tomatoes – no salt added
  • 15 ounce white beans – drained and rinsed
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 cup frozen spinach thaw and drained
  • 1/3 cup of dried orzo pasta

Instructions
  1. Heat oil in a large pot and add onion, carrots, celery, and garlic. Cook, stirring until softened. Add cut-up meatballs. Cook for 2 minutes.
  2. Add chicken stock, crushed tomatoes, beans, dried basil and dried oregano. Bring the pot to a boil and then turn it down to a simmer.
  3. Add dried orzo pasta and spinach. Cook for 10 minutes or until orzo pasta is tender. Serve and enjoy!

If you are looking for a great make-ahead, tasty small bite appetizer for your holiday week, these Sweet and Tangy Cranberry Orange Meatballs are festive and have all those holiday flavors we love! You can make the meatballs beforehand and freeze them until you are ready to put all the ingredients in the slow cooker to save you even more time in the kitchen and give you more time to celebrate with family!

Ingredients
Meatballs
  • 2 pounds lean ground beef
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 2 large eggs
  • 1/2 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1/2 cup breadcrumbs plain
  • 1 cup 2% milk
  • 2 tablespoon Parmesan cheese grated
Orange Cranberry Sauce
  • 1/2 cup jellied cranberry sauce
  • 1/2 cup sugar-free orange marmalade with Splenda
  • 1 tablespoon dehydrated minced onions
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil or spray non-stick cooking spray
  • 1/4 cup Chopped parsley for garnish

Meaballs
  1. Clean area and preheat oven at 425 degrees.
  2. Line two baking sheets with foil and set them aside.
  3. Place all the ingredients for the meatballs in a large mixing bowl. Gently mix with your hands until well combined. Do not overmix.
  4. Use a small scooper to portion out meatballs to ensure they are all the same size and cook evenly. Place on foil-lined baking sheet.
  5. Bake meatballs in over for 10-14 minutes or until internal temperature reaches 160 degrees.
Meatballs & Sauce
  1. Once the meatballs have been cooked, lightly spray your slow cooker with a non-stick cooking spray and add meatballs.
  2. Top the meatballs with the remaining ingredients listed for the orange cranberry sauce and stir to coat the meatballs well.
  3. Cover and cook on high for 2 hours. Turn heat to low until ready to serve.
  4. Note: Cooked meatballs can be stored in the refrigerator for 3 days or frozen for up to 3 months.

Greek Meatballs

These meatballs are great for any meal or occasion, but my favorite reason to make these is for leftovers!  Meatballs are a great protein option to make ahead and pack for lunch.  They are delicious with fresh spinach salads, pasta salads, or just sliced cucumbers.  I love to serve these little guys with fresh tzatziki!

Ingredients

  • 1 pound 93% lean ground turkey
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano ground
  • 1/2 teaspoon pepper ground
  • 1/4 teaspoon salt
  • 1/4 cup plain breadcrumbs dry, grated
  • 10 ounces frozen spinach leaves thawed and drained
  • 1/2 cup reduced fat feta cheese crumbled
Tzatziki Sauce
  • 1 English cucumber shredded and drained
  • 1 1/2 cups Greek yogurt plain, nonfat
  • 2 garlic cloves minced
  • 1/4 teaspoon salt
  • 1/4 cup fresh dill chopped
  • 2 Tablespoons lemon juice fresh

Stove Top Instructions
  1. Wash your hands and clean your preparation area.
  2. For the tzatziki, use a box grater or food processor to shred the cucumber. Drain any excess liquid.
  3. In a small bowl, combine all ingredients evenly in a bowl. Cover and refrigerate for flavors to meld between 20 to 30 minutes or up to 2 hours before serving.
  4. In a large bowl, mix ground turkey, garlic powder, oregano, salt, pepper, and breadcrumbs.
  5. Stirring evenly, add thawed and drained spinach, then add feta cheese.
  6. Make meatballs using a tablespoon for a perfect measurement.
  7. Warm a skillet or pan to medium heat. Evenly coat with cooking spray and arrange meatballs around the pan.
  8. Cook for 2-3 minutes and rotate individually on all sides until browned and cooked to an internal temperature of 165 degrees F.
  9. Serve with some tzatziki on the side or as a dip.
Air Fryer
  1. Wash your hands and clean your preparation area.

  10. Serve with some tzatziki on the side or as a dip.

Ingredients
  • 1 pound extra lean ground beef
  • 1/2 cup bread crumbs
  • 1 large egg
  • 1/2 teaspoon black pepper
  • 1 head cabbage shredded
  • 2 15 oounce cans tomato sauce low sodium
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 8 ounce cranberry sauce
  • 1 tablespoon lemon juice
  • 4 giner snap cookies crushed

  1. In a medium bowl, combine ground beef, bread crumbs, egg and black pepper. Form into 1 inch meatballs.
  2. Place 1/2 of shredded cabbage in a large pot, add meatballs. Spoon cranberry sauce over the meatballs and add remaining cabbage
  3. In a bowl, mix the tomato sauce, Italian seasoning, and garlic powder. Pour over meatball/cabbage mixture.
  4. Simmer uncovered, 20 minutes. Stir gently being careful not to break up meatballs. Add the lemon juice and cookie crumbs. Simmer another 10-15 minutes until meatballs are completely cooked.
