Ingredients
  • 1 tablespoon olive oil
  • 2/3 cup chopped onion
  • 1/4 cup flour
  • 2 1/2 cups diced green chilies
  • 2 cups reduced-fat unsalted chicken broth
  • 2 cups cooked shredded, skinless chicken breast 1/2 teaspoon garlic powder
  • 1 tablespoon cornstarch
  • 8 corn tortillas 6 inch
  • 1 cup reduced-fat extra-sharp finely shredded cheddar cheese

Instructions
  1. Heat the oil in a medium sauce pan.
  2. Sauté the chopped onion in the oil.
  3. Add the flour and cook for 1 minute.
  4. Add the chilies, chicken broth, chicken and garlic powder.
  5. Simmer uncovered for 5 minutes.
  6. Mix the cornstarch into about 1/4 cup of cold water until all the lumps are gone.
  7. Add to the chile and chicken mixture.
  8. Cook for 2 more minutes.
  9. Tear the tortillas into strips and divide in- to thirds.
  10. Add them to the pan and cook until they are hot, stirring with a spoon from time to time.
  11. Sprinkle the cheese over the enchiladas.
  12. Cover the pan and cook until the cheese has melted. Serve immediately.

Ingredients
  • 1 pound boneless skinless chicken breast halves
  • 1 16 ounce can no salt added pinto beans rinsed and drained
  • 1 14.5 ounce can diced tomatoes with mild green chilies drained
  • 1 each medium green, red and yellow sliced into strips
  • 1 medium onion halved and sliced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon minced garlic
  • 6 6- inch corn tortillas warmed

  1. In a 3-quart slow cooker, combine chicken, beans, tomatoes, peppers, onion and seasonings. Cover and cook on low for 5-6 hours or until chicken is tender.
  2. Remove chicken and cool slightly. Shred and return to slow cooker to heat through.
  3. Spoon about 3/4 cup chicken mixture down the center of each tortilla. Top with lettuce, tomato and& sour cream if desired

Ingredients
  • 1 pound lean ground turkey
  • 1 large onion chopped
  • 1 large green bell pepper chopped
  • 1 8 ounce package fat free cream cheese
  • 1 teaspoon chili powder
  • 1 10 ounce can enchilada sauce
  • 6 corn tortillas
  • 1 cup reduced-fat shredded Mexican blend cheese

Instructions
  1. Wash your hands and clean your preparation area. Rinse fresh vegetables under cool running water before slicing. Preheat oven to 400 degrees F.
  2. In a large skillet, cook the ground turkey, onion, and pepper over medium heat until meat is no longer pink; drain.
  3. Stir in cream cheese and chili powder. Pour enchilada sauce in a shallow bowl. Dip tortillas in sauce to coat.
  4. Place two tortillas in a 13 X 9 inch baking dish coated with cooking spray; spread with half of the beef mixture.
  5. Sprinkle with 1/3 cup cheese.
  6. Repeat layers.
  7. Top with remaining tortillas and cheese.
  8. Bake uncovered for 20-25 minutes or until heated through and cheese is melted.
  9. Let stand 10 minutes before serving.

  • 12 ounces thinly sliced lower sodium, deli roast beef
  • 3 ounces light or reduced-fat herb-flavored cream cheese
  • 4 corn tortillas 7 or 8-inch
  • 2 cups spinach leaves about 20 leaves
  • 1 jar roasted red peppers rinsed and drained, 7 ounce

  1. Spread cheese evenly over one side of each tortilla.
  2. Place deli roast beef over cheese leaving 1/2-inch border around edges.
  3. Place spinach leaves over beef.
  4. Arrange peppers down center, over spinach.
  5. Roll up tightly and wrap in plastic wrap.
  6. Refrigerate at least 30 minutes to overnight before serving.
  7. To serve, cut each roll crosswise into 8 slices. Arrange cut side up on serving platter.

Ingredients
  • 1 tablespoon canola oil
  • 2 cups frozen corn kernels
  • 1 cup red onion chopped
  • 4 Roma tomatoes seeded and chopped
  • 2 teaspoons minced garlic
  • 3 medium zucchini chopped
  • 1 cup unsalted black beans rinsed and drained
  • 3/4 cup reduced fat Monterey Jack cheese grated or shredded
  • 12 corn tortillas

  1. In a skillet, sauté corn kernels in 1/2 tablespoon. oil. Remove and set aside.
  2. In same skillet, add remaining oil, red onion, tomatoes, garlic, and zucchini.
  3. Cook 1 minute.
  4. Add beans and heat through. Stir in corn.
  5. Divide mixture among 12 corn tortillas.
  6. Top each with 1 tablespoon cheese.
  7. Roll up.
