Ingredients
  • 1 pound extra lean ground beef (96% Lean/4% Fat)
  • 1/2 cup onion finely chopped
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons beef bouillon
  • 2 3/4 cups water
  • 9 ounces elbow macaroni noodles (approx 2 ½ cups)
  • 2 cups lowfat shredded cheddar cheese
  • 1/4 cup plain nonfat Greek yogurt
  • 1/4 cup skim milk

Instructions
  1. In a large deep skillet with a lid, cook the ground beef and onion on medium-high heat until ground beef until it’s no longer pink and it has reached 155-degree Fahrenheit.
  2. Add onion powder, garlic powder, beef bouillon, pepper, tomato paste and Worcestershire sauce into the ground beef and stir until it’s combined well.
  3. Add the water and elbow noodles. Stir to combine and bring to a boil.
  4. Once boiling, cover the pan with the lid, and reduce heat to medium-low. Let it cook for 15 minutes or until all the liquid is absorbed and the pasta is cooked. Remove from heat.
  5. Add shredded cheese, yogurt, and milk. Stir until combined. Serve immediately.

Ingredients
  • 2 eggs beaten
  • 3/4 cup 1% Milk
  • 16 ounces frozen spinach leaves thawed and drained
  • 1 cup onion diced
  • 1 teaspoon oregano dry, ground
  • 1/2 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups whole wheat soft breadcrumbs about 4 slices of bread
  • 1/4 cup panko breadcrumbs Italian seasoned
  • 1 pound extra lean ground beef
  • 1/3 cup tomato sauce
  • 2 Tablespoons brown sugar
  • 1/2 Tablespoon mustard

Oven Instructions
  1. Preheat oven to 350 degrees F. In a large bowl combine eggs, milk, spinach, onion, and seasonings together.
  2. Add dry breadcrumbs, panko breadcrumbs, and lean ground meat into the wet mixture. Using clean hands, mix all ingredients together until well combined.
  3. Lightly spray a loaf pan with cooking spray. Transfer the meat mixture to the pan, and pat well until evenly distributed.
  4. Bake in the oven set at 350 degrees F for 1 hour and 20 minutes, or until internal temperature reaches 160 degrees F.
  5. In a small saucepan, stir together tomato sauce, brown sugar, and mustard over medium heat.
  6. Spoon off any excess fat from the top of the meatloaf. Pour the cooked tomato sauce over the meatloaf.
  7. Return to the oven for 10-15 minutes or until the sauce has a sticky consistency.
  8. Remove from the oven and let the loaf rest for 10 minutes before slicing and serving.
Air Fryer Cooking Instructions
  1. Preheat the air fryer to 350 degrees F.
  2. Combine all wet and dry ingredients together in a large bowl.
  3. Divide the meat mixture into two equal parts.
  4. Form and shape each half into small meatloaves.
  5. Place in the air fryer for 25 minutes.
  6. Spoon over the tomato sauce and cook an additional 7-10 minutes, or until internal temperature reaches 160 degrees F.
  7. Remove loaves from air fryer and let rest for 5-10 minutes before slicing and serving.
Recipe Notes

To make soft breadcrumbs: Place fresh bread slices into a food processor. Blend until broken into crumbs. (4 slices of bread will make about 2 cups of breadcrumbs)

Ingredients
  • 1 tablespoon olive oil
  • 1 cup yellow onion chopped
  • 1 cup green bell pepper chopped
  • 1/2 cup jalapeno seeded & chopped
  • 1 tablespoon garlic minced
  • 1 pound extra lean ground beef
  • 1 14.5 oz can diced tomatoes with the liquid
  • 1 cup water
  • 1 15 oz can pumpkin puree
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 15 oz can kidney beans rinsed and drained

  1. Wash your hands and clean your preparation area.
  2. Heat oil in a large pot over medium high heat.
  3. Add onion, bell pepper, jalapeños and garlic and cook, stirring frequently, until tender.
  4. Add lean beef and cook until browned.
  5. Add diced tomatoes, pumpkin puree, water, chili powder, cumin, and bring to a boil.
  6. Reduce heat to medium low and add beans.
  7. Cover and simmer, stirring occasionally, for 30 minutes more. Ladle chili into bowls and serve.

Ingredients
  • 8 lasagna noodles cooked and drained
  • 1 1/2 cups fat free, low sodium cottage cheese
  • 1 cup fat free, shredded mozzarella cheese
  • 1 tablespoon fresh parsley minced
  • 3/4 lb extra lean ground beef
  • 1 (16 ounce) can low sodium diced tomatoes
  • 1 (8 ounce) can low sodium tomato sauce
  • 1 (10 ounce) can low sodium tomato paste
  • 2 cloves fresh garlic minced
  • 1/2 cup white onion chopped
  • 1/2 cup green bell pepper chopped
  • 1/2 teaspoon salt-free Italian seasoning

  1. Wash your hands and clean your preparation area. Rinse any fresh vegetables under cool running water. Preheat the oven to 375 degrees F.
  2. In a skillet, cook beef, onion, and garlic until meat is no longer pink, drain excess fat off of beef if necessary.
  3. Add tomatoes, tomato sauce, green bell pepper, Italian seasoning, and tomato paste. Simmer for about 10 minutes then set aside.
  4. Mix together cottage cheese, Mozzarella cheese, and parsley.
  5. Spread this mixture over each noodle and roll up.
  6. Place seam side down in a greased baking pan.
  7. Top all roll ups with sauce mixture and then sprinkle with Mozzarella cheese, if desired.
  8. Cover dish and bake at 375 degrees for 30 minutes or until thoroughly heated and bubbly. Let stand about 10 minutes before serving for flavors to blend.

Ingredients
  • 1 pound extra lean ground beef
  • 1/2 cup bread crumbs
  • 1 large egg
  • 1/2 teaspoon black pepper
  • 1 head cabbage shredded
  • 2 15 oounce cans tomato sauce low sodium
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 8 ounce cranberry sauce
  • 1 tablespoon lemon juice
  • 4 giner snap cookies crushed

  1. In a medium bowl, combine ground beef, bread crumbs, egg and black pepper. Form into 1 inch meatballs.
  2. Place 1/2 of shredded cabbage in a large pot, add meatballs. Spoon cranberry sauce over the meatballs and add remaining cabbage
  3. In a bowl, mix the tomato sauce, Italian seasoning, and garlic powder. Pour over meatball/cabbage mixture.
  4. Simmer uncovered, 20 minutes. Stir gently being careful not to break up meatballs. Add the lemon juice and cookie crumbs. Simmer another 10-15 minutes until meatballs are completely cooked.
