Our Easy Chicken Fajitas recipe can not get any easier! All you need is your ingredients and a slow cooker, and dinner will be ready when you get home!

Ingredients
  • 1 pound boneless skinless chicken breast halves
  • 1 16 ounce can no salt added pinto beans rinsed and drained
  • 1 14.5 ounce can diced tomatoes with mild green chilies drained
  • 1 each medium green, red and yellow sliced into strips
  • 1 medium onion halved and sliced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon minced garlic
  • 6 6- inch corn tortillas warmed

Instructions
  1. In a 3-quart slow cooker, combine chicken, beans, tomatoes, peppers, onion and seasonings. Cover and cook on low for 5-6 hours or until chicken is tender.
  2. Remove chicken and cool slightly. Shred and return to slow cooker to heat through.
  3. Spoon about 3/4 cup chicken mixture down the center of each tortilla. Top with lettuce, tomato and& sour cream if desired

Ingredients
  • 2 tablespoons olive oil
  • 1 large onion thinly sliced
  • 2 cloves minced garlic
  • 1 (14.5 ounce) can Italian style tomatoes
  • 1/2 cup black olives sliced and drained
  • 2 tablespoons parsley chopped
  • 1/2 cup chicken broth
  • 1 pound cod fillet

  1. In a skillet, heat oil over medium heat. Saute onions and garlic oil until softened.
  2. Stir in tomatoes, olives, parsley, and chicken stock. Simmer for 5 minutes.
  3. Place cod in sauce. Sime for an additional 5 minutes until fish turns white and flakes easily or internal temperature reaches 145 degrees F.

Ingredients
  • 1 tablespoon canola oil
  • 2 cups frozen corn kernels
  • 1 cup red onion chopped
  • 4 Roma tomatoes seeded and chopped
  • 2 teaspoons minced garlic
  • 3 medium zucchini chopped
  • 1 cup unsalted black beans rinsed and drained
  • 3/4 cup reduced fat Monterey Jack cheese grated or shredded
  • 12 corn tortillas

Instructions
  1. In a skillet, sauté corn kernels in 1/2 tablespoon. oil. Remove and set aside.
  2. In same skillet, add remaining oil, red onion, tomatoes, garlic, and zucchini.
  3. Cook 1 minute.
  4. Add beans and heat through. Stir in corn.
  5. Divide mixture among 12 corn tortillas.
  6. Top each with 1 tablespoon cheese.
  7. Roll up.

Ingredients
Quick Chicken
  • 1/4 cup panko breadcrumbs
  • 1 6 ounce chicken breast skinless, cut into 1-inch strips
  • 1 tablespoon canola oil
Spring Vegetables
  • 1 tablespoon canola oil
  • 1/2 cup red onion chopped
  • 1/2 cup fresh carrots sliced
  • 1/2 cup fresh mushrooms
  • 1 small zucchini sliced
  • 1 small yellow squash slicked
  • 2 tablespoons minced garlic
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 2 tablespoons Parmesan cheese shredded

  1. Place bread crumbs in a large re-sealable plastic bag, and add chicken, and shake a coat. In a large skillet, cook chicken in 1 tablespoon of oil over medium heat until internal temperature reaches 165 degrees fahrenheit. Remove and keep warm in the oven.
  2. Using the same skillet, saute the onion and carrots int he 1 tablespoon of oil. Next, add the zucchini, squash, longer or until vegetables are tender. Return the chicken to pan, sprinkle with the cheese and serve.

Ingredients
  • 1 teaspoon olive oil
  • 1/2 each onion chopped
  • 2 teaspoons minced garlic
  • 2 cups chicken breasts chopped, cooked
  • 16 ounce can low sodium pinto beans rinsed and drained
  • 14.5 ounce can no-salt-added diced tomatoes un-drained
  • 8.25 ounce can no salt added whole kernel corn drained
  • 4.5 ounce can green chilies chopped, un-drained
  • 14.5 can chicken broth
  • 1/2 teaspoon ground cumin
  • 1 Tablespoon lime juice
  • 6 tablespoons reduced fat, sour cream
  • 1/4 cup fresh cilantro leaves chopped

  1. Heat oil in a Dutch oven over medium-high heat.
  2. Add onion and garlic; saute 2 to 3 minutes.
  3. Add chicken, beans, tomatoes, corn, chilies, chicken broth and cumin.
  4. Bring to a boil; reduce heat, and simmer 15 minutes.
  5. Turn heat off and squeeze in lime juice.
  6. Ladle soup into bowls; top with sour cream and cilantro.
