What exactly is a Runza? 🥟✨ 

A Runza is a beloved Midwestern comfort food with roots in German-Russian bierocks — soft baked bread filled with seasoned ground beef, cabbage, onions, and often cheese. Made famous in Nebraska, these warm handheld pockets became a go-to meal for busy families because they’re hearty, portable, and completely satisfying.  

This easy version uses frozen bread dough instead of homemade dough, so you get all the cozy, nostalgic flavor with a lot less work. Perfect for weeknight dinners, meal prep, lunchboxes, road trips, or grabbing on the go when life gets busy! 🥖❤️

Ingredients
  • 22 ounces refrigerated French bread dough
  • 1 pound ground beef
  • 1 cup yellow onion diced
  • 2 1/2 cups green cabbage shredded
  • 1 Tablespoon water
  • 2 teaspoons Worcestershire sauce
  • 3/4 teaspoon ground oregano
  • 3/4 teaspoon ground black pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon ground turmeric
  • 6 ounces Fat Free Mozzarella Cheese

Instructions
  1. Wash hands and clean all prep surfaces.
  2. Brown ground beef over medium heat. Drain excess fat, if needed.
  3. Add diced onions and shredded cabbage on top of browned beef. Cover with a lid and cook for 15 minutes over medium heat, or until vegetables are softened.
  4. Stir vegetable and beef mixture and add water, Worcestershire sauce, and spices. Continue to cook for a few minutes until spices become fragrant. Turn of heat and cover.
  5. While beef and cabbage mixture cools slightly, preheat oven to 350-degrees and prepare the bread dough.
  6. Divide refrigerated dough into 12 equal portions. Roll each portion of dough into thin rectangles.
  7. Top each dough portion with ½ oz of mozzarella cheese and beef/cabbage mixture.
  8. Pinch dough closed to create rectangular “loaf” shapes. Alternatively, you can shape dough into “rolls”, if desired.
  9. Place filled runzas seam-side down on a sheet pan and bake for 18-20 minutes, or until golden brown.

Runzas freeze well!

Make multiple batches and freeze cooked runzas for up to three months.

Don’t want to shred cabbage? Use pre-shredded packages from the produce section or drained sauerkraut instead!

Runzas are delicious hot or room-temperature!

Ingredients
  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 cups low-fat buttermilk room temperature
  • 1/4 cup honey
  • 2 1/2 tablespoons olive oil
  • 2 tablespoons ground flax seeds
  • 2 tablespoons slivered almonds
  • 2 tablespoons chia seeds

Instructions
  1. Preheat oven to 300 degrees Fahrenheit.
  2. Spray a 9” x 5” loaf pan with non-stick spray.
  3. In a large mixing bowl, whisk together whole wheat flour, all-purpose flour, flax seeds, baking soda and salt. Set it aside.
  4. In a medium bowl, whisk together buttermilk, honey, and oil.
  5. When oven is preheated, Combine the wet ingredients into the dry ingredients and mix only until combined with a wooden spoon. Do not overmix.
  6. Place batter into prepared loaf pan. Smooth the top of the batter.
  7. Sprinkle the slivered almonds and chia seeds on top, and gently push down into the dough to get them to stick.
  8. Bake for 55 minutes or until done.
  9. Remove from the oven and let cool on wire rack for about 10 minutes before removing bread from the pan. Cool completely before slicing. Slice less than one half inch to get 14 slices.

  • 1 Medium Avocado Sliced
  • 1 jalapeno Seeded and diced

  • 1/2 Teaspoon garlic Minced
  • 2 Tablespoons lime juice About 1 Small Lime
  • 1/4 Teaspoon salt

  • 3 Slices 100% whole wheat bread
  • 1/2 Cup cherry tomatoes Sliced in Half
  • 3 Tablespoons feta cheese Crumbled
  • 1/2 Tablespoon hot sauce

  1. Pulse the peas in a food processor until smooth.
  2. Transfer peas to a medium bowl. To the same bowl, add the flesh of the avocado. Combine avocado and peas by smashing together into a chunky texture.
  3. To the avocado mixture, add jalapeno, red onion, cilantro, garlic, lime juice, and salt. Stir to combine. Set aside.
  4. Toast bread to desired doneness.
  5. Evenly divide the guacamole by spreading onto the toast (about 1/3 Cup)
  6. Top the toast with an even division of the cherry tomatoes, feta cheese, and hot sauce.
  7. Serve immediately

  • 1/4 tsp salt

  • 2 tbsp canola oil
  • 1/2 cup sugar

  1. Preheat oven to 400 degrees and grease a medium loaf pan and set aside. In a large bowl mix oil, egg, banana and sugar.
  2. In a medium bowl add flour, salt, baking powder and mix until combine
  3. Slowly add flour mixture and milk to wet ingredients, alternating until incorporated. Fold in chia seeds.
  4. Place batter in loaf pan and place in the oven for 60 minutes or until a tooth pick inserted in the middle comes out clean.

Ingredients
  • 8 slices wheat bread with crusts cut off
  • 4 ounces extra lean Canadian bacon
  • 1 1/4 cup fat free egg substitute
  • 2 cups fat free half and half
  • 1 1/2 cups shredded cheddar cheese reduced fat
  • 1 tablespoons Italian herb blend no salt added

  1. Preheat oven to 350 degrees.
  2. Spray casserole dish (9x13) with cooking spray.
  3. After crust is cut off bread, tear into bite size pieces and place in bottom of casserole dish.
  4. Beat eggs and then add all other ingredients (reserving 1/2 cup cheese to top of casserole) mixing well.
  5. Pour on top of bread mixture and top with remaining cheese.
  6. Optional seasonings: pepper, jalapeno peppers, crushed red pepper.
  7. Let set in the refrigerator for at least 30 minutes. Bake for 35 minutes.
