Try this turkey and cranberry twist on the classic taco! Either you can brown some ground turkey or use turkey leftovers!

Ingredients
Cranberry Salsa
  • 2 cups frozen cranberries
  • 1/2 apple seeded and chopped
  • 1 jalapeno seeded and chopped
  • 1 tablespoon sugar
  • 2 tablespoons ginger peeled and chopped
  • 2 tablespoons cilantro
  • 1 tablespoon lemon juice
Tacos
  • 1 pound lean ground turkey (97/3)
  • 1/2 cup low fat shredded Monterey Jack cheese
  • 2 cups lettuce shredded
  • 1 bunch cilantro for garnish
  • 8 corn tortillas
Servings: 1 Taco + 3 Tbsp Salsa

Instructions
  1. Clean your area and wash your hands before you begin.
  2. Add frozen cranberries, apple, jalapeno, sugar, ginger, cilantro, and lemon juice to a skillet on medium heat and allow ingredients to cook together.
  3. Either use an immersion blender to blend salsa together in the pan or transfer the ingredients to a blender and blend until desired consistency.
  4. Next, brown the ground turkey in a skillet until it reaches 165 °F.
  5. Place ground turkey and the taco toppings (cheese, lettuce, and cilantro) in separate bowls for assembly.
  6. On a corn tortilla place the turkey, then lettuce, then cranberry salsa, then cheese.
  7. Top off the tacos with cilantro and enjoy!

Mocha Rubbed Pot Roast

Coffee and beef may seem like unlikely partners, but this recipe makes them the perfect pair. This is not your average pot roast, it has so much flavor! You will smell the aroma of the coffee and spices as soon as you walk in the door. You will also feel good that you are feeding your family a healthy meal full of protein and vitamins. This pot roast goes perfectly with Mint Sugar Snap Peas and a whole-wheat roll.

Ingredients
Mocha Rub
  • 2 Tablespoons ground coffee beans
  • 1 Tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 1 Tablespoon unsweetened cocoa powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon sea salt
Roast
  • 2 lb beef roast
  • 1 cup brewed coffee
  • 1 cup low-sodium beef broth
  • 1/2 cup onion chopped
  • 1/8 cup honey
  • 3 Tablespoons balsamic vinegar

Instructions
  1. Rub- Mix all coffee, paprika, and all other spices in a shallow dish.
  2. Pat the roast with a paper towel. Rub mixture over the the roast and rub it in well with your hands.
  3. Pour coffee, broth, onion, honey and balsamic vinegar into the slow cooker. Place the roast with the slow cooker and broth mixture . Cook for 6-7 hours on low. *You can serve the roast with or without the liquid.

  • 1 (9 ounce) package cheese filled tortellini
  • 1 1/2 cups fresh mushroom slices
  • 1 1/2 cups broccoli florets
  • 1 1/2 cup canned artichoke hearts
  • 1/2 small red bell pepper sliced
  • 4 ounces low fat Italian dressing
  • 1/2 tsp ground oregano
  • 1/3 cup shredded Parmesan cheese

  1. Cook the tortellini al dente, according to package directions.
  2. Add broccoli florets and mushrooms before pasta is done (about 1 minute).
  3. Cook for remaining time until broccoli turns bright green and is crisp tender and the pasta is al dente (chewy to the bite).
  4. Drain and rinse pasta mixture under cool running water.
  5. Toss the pasta mixture with the artichoke hearts, red bell peppers, dressing, and oregano.
  6. Add the Parmesan cheese and toss again lightly.

Ingredients
  • 6 corn tortillas
  • 1 cup unsalted or low sodium tomato/pasta sauce
  • 1 cup reduced fat, shredded cheddar cheese
  • 1 1/2 cups seasoned, cooked skinless chicken breast or lean ground beef
  • 1 1/2 cups chopped romaine lettuce
  • 1 1/2 cups diced tomato
  • Non stick cooking spray

  1. Coat skillet with non-stick cooking spray and bring to medium-high heat.
  2. Start by toasting one tortilla in the skillet for 30 seconds and then flip to allow both sides of the tortilla to be lightly toasted.
  3. Add a thin layer of pasta sauce, cheese, and beef or chicken on top of tortilla.
  4. Allow to heat throughout.
  5. Remove from skillet and top with lettuce and tomatoes.
  6. Slice into 4 wedges and serve immediately.
  7. Repeat steps above to prepare the remaining 5 pizzas.
