Ingredients
Pea and Avocado Guacamole
  • 1/2 Cup frozen peas Thawed
  • 1 Medium Avocado Sliced
  • 1 jalapeno Seeded and diced
  • 1/3 Cup red onion Chopped
  • 1/4 Cup cilantro Chopped
  • 1/2 Teaspoon garlic Minced
  • 2 Tablespoons lime juice About 1 Small Lime
  • 1/4 Teaspoon salt
Other toppings
  • 3 Slices 100% whole wheat bread
  • 1/2 Cup cherry tomatoes Sliced in Half
  • 3 Tablespoons feta cheese Crumbled
  • 1/2 Tablespoon hot sauce
Servings: 1/3 Cup Guacamole + 1 Slice of Toast

Instructions
  1. Pulse the peas in a food processor until smooth.
  2. Transfer peas to a medium bowl. To the same bowl, add the flesh of the avocado. Combine avocado and peas by smashing together into a chunky texture.
  3. To the avocado mixture, add jalapeno, red onion, cilantro, garlic, lime juice, and salt. Stir to combine. Set aside.
  4. Toast bread to desired doneness.
  5. Evenly divide the guacamole by spreading onto the toast (about 1/3 Cup)
  6. Top the toast with an even division of the cherry tomatoes, feta cheese, and hot sauce.
  7. Serve immediately

Ingredients
  • 1.5 Cup dry pasta rigatoni
  • 1 Tablespoon olive oil
  • 2 Tablespoons grated Parmesan cheese divided
  • 1 teaspoon minced garlic
  • 1 teaspoon garlic powder divided
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon parsley dried
  • 1/2 Cup traditional marinara sauce No added sugar options
Servings: 1 cup pasta chips + ¼ cup marinara sauce

Instructions
  1. Clean and prep cooking area.
  2. Cook pasta according to the packaging.
  3. Once pasta is cooked, drain it, and set it aside.
  4. To a large mixing bowl, add your cooked pasta, olive oil, parmesan cheese (1 Tbsp), minced garlic, garlic powder (½ tsp), onion powder, cayenne pepper, and Italian seasoning. Mix until well combined.
  5. Air Fryer: If you are using an air fryer, add pasta to basket and cook at 375 degrees for 15 minutes or until crunchy. Mix pasta every 3-5 minutes for the first 10 minutes and every minute thereafter during cooking time to avoid burning. Oven: If you are using an oven, pre heat oven to 400 degrees and cook pasta chips for 15- 25 minutes or until crunchy. Mix every 3-5 minutes to allow even baking.
  6. Once pasta chips are done, mix with the remaining parmesan cheese and garlic powder and top with red pepper flakes and parsley.
  7. Serve with ¼ cup of marinara sauce (per serving) to dip and enjoy!

  • 2 Cups Dry Long Grain Brown Rice
  • 4 Cups Low Sodium Vegetable Broth
  • 1/2 Teaspoon salt

Instructions
  1. Wash your hands and clean your preparation area, and rinse all vegetables before dicing.
  2. Heat a large pot over medium-high heat. Sautee celery, onion, garlic, and mushrooms until just beginning to soften.
  3. Add the Italian herb blend and rice, and heat for 1-2 minutes, stirring frequently.
  4. Add the vegetable broth and salt. Bring to a boil over high heat then reduce to a simmer and cover for between 30-45 minutes until rice is tender and broth is absorbed. Check your rice package directions for more exact time recommendations.
  5. Remove from heat and fluff rice up. Cover and let sit for 5-10 minutes.

Spice Things Up! Substitutions in Place of Salt!

Spices help add flavor to our foods while cutting back on the amount of sodium/salt in our foods.  Here are a few substitutions to try when adding flavor to many of your favorite foods.

#1 Cumin

 Cumin Seeds

Cumin is traditionally used in Mexican dishes.  This spice comes from the Mediterranean region, which means it pairs well with many Italian, Spanish, and Greek dishes.

#2  Hot Curry

Hot Curry

Curry comes in a variety of spice mixtures.  Regions incorporate a mix of different spices like turmeric, cinnamon, cumin, coriander, and cayenne powders to create a curry blend.  Hot curry blends can add spice to grilled chicken, baked summer squash, or pasta.

#3 Nutmeg

 Nutmeg

Nutmeg is known for adding spice to many sweet dishes.  However, it is a great addition to many savory dishes as well.    Try it mixed in a baked cauliflower recipe or add it a fillet of fish.  A little goes a long way with this spice; start with 1/8 teaspoon in your dish.

Just a reminder: Start with a small amount of a spice and only increase the amount of spice you add to a dish by 1 1/2 times.   Try starting with 1/4 teaspoon for most ground spices.  You might start with less if you are adding in a hot or strong spice like cayenne, red chili peppers, cloves, nutmeg, or peppercorns!
