Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon extra virgin olive oil
  • 16 ounces shelf stable gnocchi
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 1/4 cup water
  • 6 cups spinach chopped
  • 15 ounce diced tomatoes unsalted
  • 15 ounce unsalted white kidney beans drained, and rinsed
  • 1/3 cup part-skim mozzarella cheese shredded
  • 1/4 cup Parmesan cheese shredded

Instructions
  1. Clean preparation area, wash hands
  2. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add gnocchi and cook, stirring often, until it is plumped and starting to brown; about 5-7 minutes. Place cooked gnocchi in a large bowl.
  3. Add 1 teaspoon of oil and onion to the pan and cook for 2 minutes. Stir in garlic and water. Cook until onion is cooked.
  4. Add spinach and cook by stirring until spinach begins to wilt
  5. Stir in tomatoes, beans, and simmer. Add gnocchi and sprinkle with both cheeses.
  6. Cook until cheese is melted and sauce is bubbling; about 3 minutes.

Ingredients
  • 1 pound chicken breast skinless, boneless
  • 10 3/4 ounce can of cream of mushroom 98% reduced fat
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 tablespoon of dry chives
  • 1/2 tablespoon of dry thyme
  • 1/2 tablespoon of dry parsley
  • 16 ounces dry egg noodles cooked
  • 3 cups baby spinach rinsed and chopped
  • 1 cup cheddar cheese shredded, reduced fat

  1. Wash hands and clean preparation area.
  2. Place chicken breast in the bottom of a slow cooker.
  3. In a small bowl combine cream of mushroom soup, water, garlic powder, onion powder, chives, thyme, and parsley. Pour seasoned soup mixture over chicken breast.
  4. Place lid on slow cooker and cook on low 6 – 8 hours until chicken is cooked through and shreds easily.
  5. Remove chicken breast from slow cooker and shred into fine pieces. Add shredded chicken back into the slow cooker and stir in hot cooked egg noodles, baby spinach, and shredded cheese. Replace lid and allow to heat through for 15 – 20 minutes until spinach is wilted and cheese is melted.

Vinaigrette Dressing
  • 2 tablespoons Agave syrup
  • 1 lime juice fresh squeezed
  • 1 tablespoon extra virgin olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

  • 4 cups seedless watermelon diced
  • 4 cups fresh spinach
  • 1 1/2 cup cucumber diced
  • 1/4 cup fresh mint leaves torn
  • 1/3 cup fresh basil leaves torn
  • 1/3 cup reduced fat feta cheese crumbles

Ingredients
  • 1 tbsp Poppy seeds
  • 1/2 cup artificial sucralose
  • 1/2 cup olive oil
  • 1/4 cup Vinegar
  • 1/4 tsp Worcestershire sauce
  • 3 cups spinach rinsed and torn into bite-size pieces
  • 2 cups strawberries cleaned, hulled and sliced
  • 1/4 cup almonds slivered
  • 1/2 cup Feta nonfat

  1. In a medium bowl, whisk together the poppy seeds, sugar, olive oil, vinegar and Worcestershire sauce. Cover and chill if desired.
  2. In a large bowl, combine the spinach, strawberries and almonds. Toast the almonds for added flavor if desired.
  3. Pour dressing over salad, and toss. refrigerate 10-15 minutes before serving.
