Roasted Tilapia with Orange Parsley Salsa

Ingredients
- 3 oranges about 1 pound
- 1/4 cup chopped fresh parsley divided
- 2 tablespoons extra virgin olive oil divided
- 3/4 teaspoon salt divided
- 4 4 ounce tilapia fillets
- 1/2 teaspoon freshly ground black pepper divided
- 2 cups hot cooked instant brown rice

- Preheat oven to 400° F.
- Sprinkle fish evenly with 1/4 teaspoon salt and 1/4 teaspoon pepper. Place fish in an oven proof skillet coated with remaining 1 tablespoon oil. Bake at 400° F for 14 minutes or until fish reaches an internal temperature of 145 degrees.
- Grate 2 teaspoons orange zest from rind. Peel and section oranges over a bowl, chop the sections.
- Combine zest, chopped orange, parsley, 1 tablespoon oil, and 1/4 teaspoon salt, and 1/4 teaspoon pepper in a bowl; toss well.
- Serve the cooked tilapia on a bed of brown rice, topped with the orange and parsley salsa.
Grilled Tilapia Burgers
Ingredients
- 2 (8 ounce) tilapia filets cut in half horizontally
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 4 whole-wheat hamburger buns
- 1 cup coleslaw mix with dressing included
- 1/2 cup crushed pineapple drained
- 1/4 teaspoon pepper
- 1/4 teaspoon sea salt

- Spray a non stick skillet with non-stick spray and heat.
- Place tilapia in the skillet and sprinkle with onion powder, cracked pepper, and sea salt and grill. Grill on each side for about 5 minutes, and after flipping the first time, sprinkle the opposite side with onion powder, garlic powder, cracked pepper, and sea salt. To test doneness, ensure that fish flakes easily.
- Wile tilapia is cooking, combine coleslaw mix, dressing, and crushed pineapple in a medium sized bowl. Mix until combined.
- Top half of whole wheat hamburger bun with one cooked tilapia filet, and 1/4th prepared pineapple coleslaw and other half of hamburger.
Homemade Basil Pesto
Ingredients
- 1 cup walnuts chopped, toasted
- 4 cloves garlic
- 4 cup basil washed, dried, and destemmed
- 1 tsp salt
- 1 tsp pepper
- 3/4 cup reduced fat parmesan cheese grated
- 1 cup extra virgin olive oil

- In a food processor with a steel blade attachment, put toasted walnuts and garlic cloves, and process for 5 pulses.
- Add basil, salt, and pepper. Process 30 seconds.
- Add olive oil and parmesan cheese, process until smooth (about 10 seconds).
