Italian Artichoke Chicken

Savor the flavorful Italian Artichoke Chicken and that home-cooked feel! Easy to prepare and large enough for leftovers, I am happy to share one of my family favorites for a Sunday dinner. Serve with pasta or over spinach and customize your meal!

Ingredients
  • 6 4 ounce chicken breast skinless and boneless
  • 1 Tablespoon Italian seasoning
  • 5-6 Roma tomatoes cored and chopped
  • 2 garlic cloves thinly sliced
  • 1 14 ounce can quartered Artichoke Hearts drained
  • 3 Tablespoon olive oil
  • 1 teaspoon sugar
  • 3 Tablespoon flour
  • 1/2 cup mozzarella cheese
  • fresh basil

Instructions
  1. Preheat oven to 350F degrees. Arrange raw chicken breasts in a 9X11 casserole dish. Season with Italian seasoning, set aside.
  2. In a large bowl mix together, tomatoes, garlic and drained artichoke hearts. Add extra virgin olive oil, sugar, and flour. Mix well.
  3. Pour the tomato and artichoke mixture over the chicken. Cover with foil and place in preheated oven, bake for 35-40 minutes.
  4. Remove from oven and uncover. Sprinkle mozzarella cheese over the top and place the chicken under the broiler for a few minutes until the cheese is golden brown and the vegetables are caramelized.
  5. Remove from oven and top with chopped basil over the hot dish.
  6. *Serve over your favorite pasta or pair chicken with a fresh spinach salad….or do both!

Ingredients
  • 3 cups baked and peeled russet potatoes
  • 3 1/2 cups cauliflower fresh florets (look for your grocery store’s ready to eat bag)
  • 1/2 cup yellow onion chopped
  • 2 garlic cloves chopped
  • 2 cups fat-free lower sodium, chicken broth
  • 2 cups 1% Milk
  • 1/2 teaspoon salt
  • 1/4 teapsoon pepper
  • 1/2 cup plain nonfat Greek yogurt
  • 1/2 cup reduced-fat shredded cheese
  • 1/4 cup green onion chopped
  • 3 slices cooked low sodium turkey bacon crumbled

  1. Wash potatoes well with a brush under cool running water. Place potatoes in oven for 1 hour at 400 degrees Fahrenheit, or pierce potatoes with a fork and microwave on high for 5 minutes, turning over and microwaving for about 4-5 minutes until tender. Cool, peel and cube potatoes.
  2. Steam fresh cauliflower in microwave following ready to eat bag instructions, or boil fresh cauliflower in a pot. Drain and set cauliflower to the side.
  3. In a large pot, using cooking spray, sauté chopped onion and garlic on medium heat until tender.
  4. Add potatoes and cauliflower to onion and garlic. Stir in chicken broth and milk, bring to a slow boil.
  5. Use an immersion blender to puree in pot until smooth, or pour soup into a blender to puree- return to pot.
  6. Add salt, pepper, and yogurt to pureed soup and cook on low heat another 10 minutes, stirring occasionally.
  7. Remove from heat, serve 1 cup into each bowl. Top with shredded cheese, chopped green onion, and crumbled bacon.

Ingredients
  • 12 ounces lean turkey Italian sausage
  • Nonstick cooking spray
  • 1 cup onion chopped
  • 1 cup sweet potato peeled & cubed
  • 1 1/2 cups low-fat low-sodium chicken broth
  • 15 ounce unsalted white beans rinsed and drained
  • 2 garlic cloves minced
  • 4 cups kale chopped
  • 1 teaspoon rosemary chopped
  • 2 tablespoons Parmesan cheese shredded

  1. Remove casings from sausage.
  2. Coat a large nonstick skillet with cooking spray and heat.
  3. Add Italian sausage and onion to pan, and cook until sausage browns, stirring to crumble. Drain sausage and return to pan.
  4. Stir in potatoes, beans, garlic, and chicken stock; bring to a simmer.
  5. Cover and cook 7 minutes.
  6. Stir in chopped kale and rosemary, and cook for 4 minutes until kale wilts, stirring occasionally. Serve soup in 4–6 bowls, serving with parmesan cheese.

Ingredients
  • 3 cups French green beans fresh
  • 3/4 cup yellow onion large dice
  • 8 ounces mushrooms sliced
  • 2 teaspoon garlic cloves diced
  • 2 teaspoon kosher salt course
  • 1 teaspoon black pepper ground
  • 2 tablespoon balsamic vinegar

  1. Preheat oven to 400*F.
  2. Clean preparation area and wash vegetables.
  3. Snap each end of the French green bean. Green beans can be stringy, so as you snap the ends, pull down to remove the fibrous string.
  4. Toss green beans, diced onion, sliced mushrooms, diced garlic, olive oil, kosher salt, pepper, and balsamic vinegar together.
  5. Place in an 8” x 10” oven safe dish and roast in oven for 20 minutes. Stir at 10 minutes to avoid burning.
  6. Remove from oven, place in serving dish, and enjoy.

Ingredients
  • 2 pounds fresh salmon fillet
  • 1/4 cup honey
  • 1 tablespoon fresh orange zest
  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon fresh grated ginger root
  • 2 garlic cloves grated
  • 1 orange thinly sliced

  1. Preheat oven to 400 degrees F. Cover a large baking sheet with heavy duty foil.
  2. Remove salmon from packaging and place on the covered baking sheet; scales down.
  3. Combine the honey, orange zest, orange juice, ginger and garlic in a glass jar. Cover the jar with lid and shake till all is mixed well.
  4. Pour dressing over salmon on the pan.
  5. Thinly slice 1 orange and place around salmon.
  6. Bake salmon for 25-30 minutes until it reaches an internal temperature of 145 degrees. A thermometer should be measured at the thickest part of the fillet.
