Ingredients
  • 4 medium tomatoes
  • 6 apricots
  • 1/2 medium red onion
  • 1/4 cup red wine vinegar
  • 1 1/2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1/3 cup goat cheese crumbles
  • 1/4 cup almonds sliced

Instructions
  1. Wash your hands and clean your preparation area. Rinse all fruits under cool running water to remove dirt and debris.
  2. Slice tomatoes and apricots into bite-sized wedges and place in a large bowl.
  3. Slice the red onion into very thin strips and place them in the bowl as well.
  4. In a small bowl, combine the vinegar, honey, and mustard until smooth and combined. Pour vinegar dressing over the tomato combination and stir to evenly distribute.
  5. Top with goat cheese and almonds just before serving.

Ingredients
  • 1/2 cup non-fat plain greek yogurt
  • 1 cup 2% milk
  • 1/4 cup chia seeds
  • 1 teaspoon honey
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

  1. Wash your hands and clean your area.
  2. Combine all ingredients in a bowl and mix well. You can use either a fork to beat, a whisk, or an electric mixer.
  3. Let stand for 15-20 minutes on the counter. Cover and refrigerate overnight.
  4. Pour into bowls and top with desired toppings - we recommend fresh fruit, nuts and/or granolas.

Ingredients
Squash & Chicken
  • 2 spaghetti squash cut in half
  • 1 tablespoon extra virgin olive oil
  • 2 8 ounce chicken breasts diced
  • 1 cup cherry tomatoes
  • 3 ounces fresh mozzarella pearls
  • 1 teaspoon Italian seasoning
  • 3 leaves fresh basil torn
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
Balsamic Glaze
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey

  1. Preheat oven to 350 degrees.
  2. While oven is heating, microwave spaghetti squash in oven for 5 to 6 minutes. This will make the spaghetti squash soft and easier to cut.
  3. Cut the top and bottom off the spaghetti squash and slice squash in half.
  4. Cook chicken in a skillet for about 4 minutes on each side.
  5. While chicken is cooking in the skillet, scrape your spaghetti squash using a spoon or knife until you get about 10 cups out. Put spaghetti squash in a bowl.
  6. Add olive oil, salt and pepper, cooked chicken, cherry tomatoes, mozzarella cheese, and fresh basil in bowl and combine.
  7. Add spaghetti squash back in bowl and bake the spaghetti squash in the oven for 20 minutes.
  8. While spaghetti squash is cooking, mix balsamic vinegar and honey together.
  9. Remove spaghetti squash after 20 minutes or when all cheese is melted, and tomatoes have begun to burst. Drizzle with balsamic glaze and serve warm!

  • 6 sheets phyllo dough frozen
  • 1/4 pound deli sliced turkey meat
  • 16 cubes fontina cheese
  • 1/2 cup cranberry sauce canned
  • 2 teaspoons honey
  • 1 teaspoons balsamic vinegar

  1. Begin with clean hands and a clean preparation area
  2. Heat oven to 350
  3. Lay out frozen phyllo dough. Let them defrost a bit so they are easy to fold
  4. Lay your turkey meat, fontina cheese, and cranberry sauce on the phyllo dough
  5. Wrap phyllo dough up. Make sure to close off the ends so when the fontina melts, it does not make a mess and melt out!
  6. Bake all wraps in the oven for about 15 minutes at 350
  7. While it is baking, whisk honey and balsamic vinegar in small bowl
  8. Once done, let stand for 5 minutes and divide each roll in half.
  9. Drizzle with honey mixture
  10. Serve warm and enjoy!

Ingredients
Shrimp Tacos
  • 1 pound raw shrimp peeled and deveined
  • 4 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 12 corn tortillas
Slaw
  • 2 cup red cabbage shredded
  • 2 teaspoon apple cider vinegar
  • 2 tablespoon honey
  • 2 limes juiced
  • 2 tablespoons cilantro finely chopped

Shrimp
  1. Clean and sanitize your workspace. Pull back your hair and wash your hands.
  2. Wash all vegetables before preparation.
  3. In a bowl, mix raw, peeled and deveined shrimp with chili powder, garlic powder, ground cumin, and paprika.
  4. Heat olive oil in a medium skillet. Once it’s heated, add the seasoned shrimp to the skillet.
  5. Cook the shrimp until it is opaque and reaches 145*F.
Slaw
  1. In a separate, clean bowl, add shredded cabbage, apple cider vinegar, honey, lime juice, and cilantro. Mix together.
  2. Place cooked shrimp in a corn tortilla. Top with the cabbage slaw.
