Beef and Cheese Pinwheels
Learn how to make simple, healthy beef and cheese pinwheels for a quick snack, appetizer, or dinner! Only takes 5 ingredients and a short amount of time!
Ingredients
- 12 ounces thinly sliced lower sodium, deli roast beef
- 3 ounces light or reduced-fat herb-flavored cream cheese
- 4 corn tortillas 7 or 8-inch
- 2 cups spinach leaves about 20 leaves
- 1 jar roasted red peppers rinsed and drained, 7 ounce

- Spread cheese evenly over one side of each tortilla.
- Place deli roast beef over cheese leaving 1/2-inch border around edges.
- Place spinach leaves over beef.
- Arrange peppers down center, over spinach.
- Roll up tightly and wrap in plastic wrap.
- Refrigerate at least 30 minutes to overnight before serving.
- To serve, cut each roll crosswise into 8 slices. Arrange cut side up on serving platter.

Pumpkin Hummus
Ingredients
- 1 15 ounce low sodium garbanzo beans
- 2 15 ounce pumpkin puree unsalted
- 1 garlic clove minced
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 2 teaspoons cinnamon

- Puree garbanzo beans in a food processor.
- Add pumpkin puree and mix well
- Add garlic, olive oil, lemon juice, ground cumin, and paprika. Mix well.
- If this recipe is too bland, add more cumin and paprika to taste.

Ingredients
- 8 oz hummus
- 1/4 cup feta cheese reduced-fat
- 1/4 cup sliced ripe olives Kalamata Olives preferred
- 1 tbsp pepperoncinis optional
- 1/2 cup cherry tomatoes sliced
- 1/4 cucumber chopped
- 1 tbsp dried or fresh oregano

- Measure out 4 ounces of hummus and place into large bowl. Then add feta, olives, pepperoncini's, tomatoes and cucumber, mix well.Add oregano and more feta for garnish and serve with pita wedges for dipping.
- Can be stored in the refrigerator for up to 3 days.
