- 3 Cup Corn
- 2 Cup edamame
- 1/2 Cup red onion
- 1 avocado
- 1 Tomato
- 1/4 Cup chopped fresh cilantro
- 2 Tbsp olive oil
- 1 Tbsp lime juice
- 2 oz feta cheese
- Mix together corn, edamame, red onion, avocado, and tomato.
- Whisk together olive oil, and lime juice. Pour over corn mixture.
- Top with cilantro and feta cheese.
