Ingredients
Dressing
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 clove fresh garlic
  • 1 tbsp dijon mustard
Salad
  • 3 cups kale chopped
  • 3 cups romaine chopped
  • 1 medium apple thinly sliced
  • 1/3 cup grated Parmesan cheese
  • 1 medium avocado cubed

Instructions
  1. Wash your hands and preparation area
  2. Whisk all of the dressing ingredients in a small bowl, or shake them up in a small mason jar.
  3. Rinse kale, romaine, apple and avocado before chopping.
  4. De-stem the kale (cut it away from the woody stems), and chop. Chopped romaine lettuce for salad.
  5. Add the sliced apple, grated cheese, and top with avocado.
  6. Toss salad with the dressing until everything is well combined.
  7. Season to taste with salt and pepper.
  8. Serve in your favorite platter and enjoy!

Ingredients
  • 2 pounds cauliflower florets
  • 1/2 pound red grapes halved
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh rosemary chopped
  • 1/4 cup olive oil
  • 1/3 cup pecans chopped

Instructions
  1. Cut cauliflower into florets and place in large bowl.
  2. Slice grapes and place them in the bowl with the cauliflower.
  3. Mince garlic and chop rosemary and add to bowl with the grapes and cauliflower.
  4. Pour olive oil over cauliflower mixture.
  5. Toss well. Spread cauliflower mixture onto a foil lined baking sheet and place in the oven at 425 degrees for 25 minutes. In the last 5 minutes of cooking, sprinkle chopped pecans across the sheet pan and continue to bake for remaining 5 minutes.

Parmesan Celery Salad

This is a simple recipe that makes a great side dish for dinner! The combination of celery and pecans might seem odd but they are perfectly combined in this dish. The pecans and nuts in general are full of protein, fiber, vitamins, minerals, and antioxidants and the American Heart Association recommends nuts as part of a healthy dietary pattern.

  • 8 sticks celery
  • 1 cup pecans toasted and chopped
  • 1/4 cup sliced green onion
  • 1 tbsp whole grain mustard
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 cup shaved Parmesan cheese

  1. Chop celery and place in large bowl.
  2. Toast pecans and add to celery.
  3. Whisk together green onion, mustard, lemon juice, and olive oil.
  4. Pour over celery and pecans.
  5. Top with shaved Parmesan cheese.

Ingredients
  • 2 cups russett potatoes ready to serve
  • 2 cups frozen broccoli florets thawed
  • 1.5 cups shredded Parmesan cheese
  • 1/8 cup grated Parmesan cheese
  • 1/2 cup dry bread crumbs
  • 1 egg white
  • 1 tablespoon Italian seasoning

Oven Instructions
  1. Preheat oven to 425F, place oven rack in the middle of the oven and line baking sheet with silicone mat or parchment paper.
  2. Steam or microwave the potatoes to the point where a fork is easily inserted but its too tough to eat (20 seconds for ready to eat potatoes in microwave)
  3. Once they are cooked, drain them and set them aside to cool down.
  4. Then place 2 cups of thawed broccoli florets into your food processor and pulse it until the broccoli resembles coarse rice. (should yield 1 1/2 cups chopped)Measure out 1 1/2 cups of the finely chopped broccoli and transfer into a large bowl.
  5. Next, pulse the semi-cooked potatoes and 1 1/2 cups of the Parmesan cheese; pulse just enough to break up the potatoes and combine then with the cheese.
  6. Place the cheese and potato mixture into the bowl with the broccoli.Add seasoning into the large bowl and fold all ingredients with a large spatula to combine all ingredients evenly.
  7. Then place grated parmesan cheese and panko bread crumbs into small bowl.Form small balls with a 1 tablespoon size cookie scoop or your hands and a spoon with the folded. Once the ball is formed, roll each veggie tot in the grated cheese and bread crumb coating
  8. Place each veggie tot on the baking sheet, about 1/2 inch apart.Bake 12 minutes, until golden brownRemove from the oven, let cool for 2-3 minutes and enjoy!
Air Fryer Instructions
  1. Complete instructions 2-8 from the "Oven Instructions" section.
  2. Preheat the air fryer to 400°F and set the time for 7 minutes.
  3. Once preheated, place food on the tray/basket making sure not crowd the tots. Spray the top of the tots with non-stick cooking spray.
  4. Close the air fryer and start the cooking. Halfway through, turn the tots over and spray the tops with non-stick cooking spray and finish the cooking.
  5. Note: you might have to cook the tots in batches.

May use fresh potatoes for this recipe instead of the ready to use russet potatoes.

Ingredients
  • 1 (9 ounce) package cheese filled tortellini
  • 1 1/2 cups fresh mushroom slices
  • 1 1/2 cups broccoli florets
  • 1 1/2 cup canned artichoke hearts
  • 1/2 small red bell pepper sliced
  • 4 ounces low fat Italian dressing
  • 1/2 tsp ground oregano
  • 1/3 cup shredded Parmesan cheese

  1. Cook the tortellini al dente, according to package directions.
  2. Add broccoli florets and mushrooms before pasta is done (about 1 minute).
  3. Cook for remaining time until broccoli turns bright green and is crisp tender and the pasta is al dente (chewy to the bite).
  4. Drain and rinse pasta mixture under cool running water.
  5. Toss the pasta mixture with the artichoke hearts, red bell peppers, dressing, and oregano.
  6. Add the Parmesan cheese and toss again lightly.
