- 3 cups old fashion rolled oats Dry
- 1/4 cup olive oil
- 4 Tablespoons maple syrup
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon divided
- 1/2 cup walnuts chopped
- 1/2 cup dried apples chopped
- 1/2 cup pumpkin seeds hulled, salted, roasted (pepitas)
- 1/2 cup cranberries sweetened, dried
- Wash your hands and clean your area.
- Preheat your oven to 300◦F.
- In a large bowl, add your oats and evenly add the olive oil. Mix until evenly coated.
- Next, add the maple syrup, vanilla extract, ½ teaspoon of cinnamon, and walnuts. Mix until well combined and oats are evenly coated.
- Transfer oat mix to a baking sheet and spread evenly, allowing space on the baking sheet. Note: Overcrowding can cause oats not to bake as thoroughly.
- Bake oat mix for 25 to 30 minutes and stir halfway through. The oat mixture should be a light golden-brown color once it is done.
- Once the oats are done baking, allow them to cool for 5 to 10 minutes.
- When oat mix has cooled, add them to a mixing bowl, along with the dried apples, pumpkin seeds, and cranberries, and mix.
- Coat the granola mix with the remaining ¼ teaspoon of cinnamon and mix.
- Serve granola as a snack or store in an air-tight container.
