Peach Crumble

Peach Crumble is a quick and easy dessert (or breakfast) to whip up! By using canned peaches you can ensure you always have the ingredients on hand. For an added touch of sweetness serve with whipped cream or vanilla frozen yogurt!

Ingredients
  • 30 ounces canned sliced peaches in juice, drained with ½ cup liquid reserved
  • 1.5 cups rolled oats dry
  • 1/2 cup all-purpose flour
  • 3 Tablespoons brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup pecans chopped
  • 1.5 Tablespoons butter melted

Oven Instructions
  1. Clean your area and wash your hands before you begin.
  2. Preheat the oven to 350 degrees
  3. Grease a 9x9 inch baking pan and pour in the drained peaches.
  4. In a bowl combine oats, flour, brown sugar, salt, cinnamon, and pecans.
  5. Add in the melted butter and 1 Tablespoon of the reserved liquid. Using a fork stir and combine the mixture. Continue to add in 1 Tablespoon of reserved liquid at a time until oats are just holding together.
  6. Cover the peaches with the crumble topping.
  7. Bake covered for 15 minutes and uncovered for 15 minutes or until the crumble is browning.
  8. For dessert, serve with whipped cream or frozen yogurt!
Air Fryer Instructions
  1. Clean your area and wash your hands before you begin.
  2. Preheat the air fryer at 350 degrees F for 3-5 minutes.
  3. Grease a 9x9 inch baking pan or air fryer tray and pour in the drained peaches.
  4. In a bowl combine oats, flour, brown sugar, salt, cinnamon, and pecans.
  5. Add in the melted butter and 1 Tablespoon of the reserved liquid. Using a fork stir and combine the mixture. Continue to add in 1 Tablespoon of reserved liquid at a time until oats are just holding together.
  6. Cover the peaches with the crumble topping.
  7. Cook the peach crumble in the air fry covered for 15 minutes and uncovered for 15 minutes or until the crumble is browning.
  8. For dessert, serve with whipped cream or frozen yogurt!

Ingredients
  • 1 15 ounce can low sodium black beans, drained
  • 1 15 ounce can low sodium kidney beans, drained
  • 1 8 ounce can tomato sauce unsalted
  • 2 10 ounce cans diced tomatoes with chilies
  • 1 4 ounce can chopped green chili peppers
  • 1 12 ounce package frozen yellow corn
  • 1 small yellow onion chopped
  • 1 package 30% less sodium taco seasoning or make your own (see notes for recipe link)
  • 1 tablespoon chili powder
  • 1.5 pounds chicken breast skinless, boneless
  • 1/4 cup cilantro chopped

Instructions
  1. Add drained black beans, and kidney beans in crockpot. Top with the tomato sauce, diced tomatoes, chili peppers, frozen corn, chopped onion, and seasonings. Stir all together.
  2. Place chicken breast into the mixture, completely cover the chicken.
  3. Set crock pot to cook 8-10 hours on LOW or 4-6 hours on HIGH.
  4. Pull chicken breasts out about 30 minutes before serving, shred with a fork and return to the crockpot stirring well.
  5. Serve chili with fresh chopped cilantro.
  6. Tip: Recipe makes for a large crowd or great for leftovers. Pack for your next day lunch, store in the refrigerator for up to 4 days, or freeze in individual airtight containers for up to 3 months for an easy reheat meal.
  7. **If using your own homemade taco seasoning, leave out the chili powder from this recipe.

This versatile chicken chili gives you one more reason to use your slow cooker … which may be your favorite kitchen appliance in the fall! Preparation is easy and quick, dinner is ready when you get home, and cleanup is a snap. Add a few corn tortilla chips for a crunch and you have a full meal!

Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 2 garlic gloves minced
  • 1 cup white onion chopped
  • 3 1/2 cups salt free, reduced fat chicken broth
  • 4 (4.5ounce) cans chopped green chilies
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 2 (11 ounce) can shoe peg or kernel canned corn unsalted and un-drained
  • 2 (15 ounce) cans navy beans undrained
  • 3 Tablespoons lime juice

Slow Cooker Directions
  1. Spray skillet with cooking spray.
  2. Sautè chicken until done. When cooled, shred chicken or cut into 1 inch cubes. Remove chicken from skillet.
  3. Sautè onions and garlic in skillet sprayed with cooking spray.
  4. Cook until onions are tender.
  5. Spray inside of slow cooker with cooking spray or use a plastic slow cooker liner.
  6. Combine all ingredients, except lime juice, and cook on low for 8-10 hours or on high for 4-5 hours.
  7. Just before serving, add lime juice and stir.
Multifunction Cooker Directions
  1. Put 1 Tablespoon canola oil in the inner pot, cube chicken breast and add to the pot. Sauté until chicken is beginning to brown.
  2. Add the onion to the chicken and cook until it begins to become translucent.
  3. Add remaining ingredients except lime juice and close the pot set the vent to closed.
  4. Cook on high pressure for 12 minutes and allow to natural release
  5. Remove the lid carefully, stir in lime juice, and serve.

  • 20 ounce crushed pineapple in juice
  • 8 ounce fat-free whipped topping frozen
  • 1 ounce package instant pistachio pudding mix sugar and fat free mix
  • 10 ounce can mandarin oranges in juice drained

  1. Wash hands and clean cooking area.
  2. Be sure to clean the tops of canned food items before opening.
  3. Add pineapple and pudding mix to a large bowl and mix.
  4. Add whipped topping and stir until well incoporated
  5. Add in mandarin oranges.
  6. Cover and let set in refrigerator for 20-230 minutes or overnight.
