Spicy Garlic Shrimp Pasta

Ingredients
  • 1 tablespoon olive oil
  • 2 tablespoon minced garlic
  • 1 red Chile pepper thinly sliced and seeded for less heat
  • 1/4 teaspoon pepper
  • 3/4 pound medium-sized frozen or fresh shrimp peeled and deveined
  • 1/2 cup no sodium low fat chicken broth
  • 4 cups fresh spinach
  • 8 ounces thin spaghetti or angel hair pasta

Instructions
  1. In large stock pot, bring water to a boil for pasta; add pasta when boiling.
  2. Cook pasta according to package directions.
  3. Heat oil in a large skillet over medium heat.
  4. Add the garlic, Chile and pepper. Add shrimp and cook for 2 minutes.
  5. Turn shrimp, add the chicken broth and bring to a boil.
  6. Reduce heat and simmer until the shrimp are opaque throughout, 2 to 3 minutes.
  7. Add the spinach and cook, tossing, until beginning to wilt, 1 to 2 minutes.
  8. Drain pasta and mix in large skillet with shrimp and spinach, about 1 to 2 minutes.
  9. Serve immediately..

Ingredients
  • 1 tablespoon olive oil
  • 1 teaspoon olive oil
  • 3 garlic cloves minced
  • 1 1/2 cups cooked chicken breast chopped
  • 2 cups fresh spinach
  • 1 1/4 cups chicken broth unsalted, reduced fat
  • 1/4 teaspoon black pepper
  • 2 teaspoons dried basil
  • 1 5.9 ounce package couscous dry

Instructions
  1. Toast pecans and 1 tablespoon of oil in a large saucepan over medium-high heat for 2-3 minutes. Remove and set aside.
  2. Add remaining oil and garlic to pan and saute for 1 minute.
  3. Add chicken, spinach, chicken broth, pepper and basil.
  4. Bring to a boil and stir in couscous.
  5. Remove from heat; cover and let stand for 6-10 minutes or until broth is absorbed.
  6. Stir in mixture adding in the pecans and cheese.
  7. Serve immediately.

Ingredients
  • 4 corn tortillas
  • Non stick cooking spray
  • 3/4 cup reduced fat, shredded cheddar cheese
  • 1/2 cup canned, low sodium black beans rinsed and drained
  • 1/2 cup onion chopped
  • 1/2 cup fresh spinach chopped

  1. Wash your hands and clean your cooking area
  2. Coat a large nonstick skillet with nonstick cooking spray and turn heat on medium-high heat.
  3. Place one tortilla in skillet and sprinkle with cheese, black beans, onions, and spinach.
  4. Heat for one to two minutes
  5. Top with another tortilla and flip quesadilla.
  6. Heat for an additional one to two minutes.
  7. Remove quesadilla from skillet and cut into four triangles
  8. Repeat layering process with remaining tortillas to make more quesadillas.

Ingredients
  • 1 3/4 cup uncooked penne pasta
  • 1 lb extra lean ground beef
  • 1 (15 ounce) can unsalted tomato sauce
  • 1 (14 ounce) can low sodium, reduced fat, beef broth
  • 1 1/2 tsp Italian seasoning
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 2 cups fresh spinach chopped
  • 3/4 cup shredded mozzerella cheese reduced fat

  1. Cook pasta according to package directions
  2. Meanwhile in a skillet, cook beef over medium heat until meat is no longer pink; drain.
  3. Stir in the tomato sauce, broth, Italian seasoning, salt and pepper.
  4. Bring to a boil.
  5. Reduce heat; simmer, uncovered, for 10 to 15 minutes or until slightly thickened.
  6. Add spinach; cook for 1-2 minutes or until spinach has turned dark green.
  7. Drain pasta; stir into beef mixture.
  8. Sprinkle with cheese; cover and cook for 3-4 minutes or until cheese is melted.

Ingredients
  • 1 tsp olive oil
  • 2 cups sliced leeks
  • 10 oz fresh spinach
  • 2 cups frozen red potatoes thawed and chopped
  • 1/3 cup fat-free milk
  • 4 egg whites
  • 4 eggs
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp dry bread crumbs
  • 1/2 cup shredded mozzarella cheese reduced fat

  1. Preheat oven to 350 degrees. Add oil to a salute pan over medium heat. Add leek and sauté 4 minutes. Add spinach and potatoes; sauté for 2 minutes or until spinach wilts.
  2. Combine milk, seasoning, salt and pepper, 4 eggs and 4 egg whites; stir well with a whisk. Add leek mixture. Pour into a 9.5 inch round baking dish or pie plate coated with cooking spray.
  3. Sprinkle with cheese and breadcrumbs. Bake at 350 degrees fro 20-25 minutes. For a golden brown top, broil for 4 minutes after baking.
