Ingredients
  • 4 tazas de grumos de coliflor
  • 4 tazas de grumos de brócoli
  • 1/2 taza de agua
  • 1/4 taza de leche descremada o leche con 1% de grasa
  • 4 onzas de queso crema sin grasa, cortado en cubos
  • 1/2 taza de yogur natural/sin sabor sin grasa
  • 1 taza de queso cheddar fuerte de contenido graso reducido rallado
  • 10 galletas saladas bajas en sodio, ralladas (pulverizadas) (aproximadamente 1/3 taza)
  • 2 cucharadas de queso parmesano rallado

Instructions
  1. Enjuague el brócoli y la coliflor. Córtelos en grumos.
  2. Ponga las verduras y ½ taza de agua en un sartén.
  3. Tape el sartén y permita que las verduras cuecen al vapor a fuego alto por 3 minutos, o hasta que estén tiernas.
  4. Añada la leche al sartén. Reduzca el calor a fuego lento.
  5. Corte el queso crema en cubos y añádalo al sartén.
  6. Permita que el queso crema se derrita. Revuelva la mezcla de vez en cuando.
  7. Agregue el yogur al sartén. Revuélvalo para cubrir la mezcla.
  8. Rocíe la mezcla con el queso cheddar rallado y permita que el queso se derrita.
  9. Mezcle las galletas saladas ralladas (pulverizadas) y el queso parmesano. Rocíe esta mezcla sobre las verduras.

Ingredients
  • 4 cups cauliflower florets
  • 4 cups broccoli florets
  • 1/2 cup water
  • 1/4 cup skim or 1% milk
  • 4 ounces fat free cream cheese cubed
  • 1/2 cup plain, fat-free yogurt
  • 1 cup reduced-fat, shredded sharp cheddar cheese
  • 10 low-sodium saltine crackers crushed (about 1/3 cup)
  • 2 tablespoons grated or shredded Parmesan cheese

Instructions
  1. Rinse broccoli and cauliflower. Cut into florets.
  2. Place vegetables and ½ cup water in skillet.
  3. Cover with lid and allow to steam over high heat for 3 minutes or until tender.
  4. Add milk to skillet. Reduce to low heat.
  5. Cut cream cheese into cubes and add to skillet.
  6. Allow cream cheese to melt. Stir occasionally.
  7. Add yogurt to skillet. Stir to coat.
  8. Sprinkle with shredded cheddar cheese and allow it to melt.
  9. Mix cracker crumbs and Parmesan; sprinkle over vegetables.

Ingredients
  • 2 pounds cauliflower florets
  • 1/2 pound red grapes halved
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh rosemary chopped
  • 1/4 cup olive oil
  • 1/3 cup pecans chopped

Instructions
  1. Cut cauliflower into florets and place in large bowl.
  2. Slice grapes and place them in the bowl with the cauliflower.
  3. Mince garlic and chop rosemary and add to bowl with the grapes and cauliflower.
  4. Pour olive oil over cauliflower mixture.
  5. Toss well. Spread cauliflower mixture onto a foil lined baking sheet and place in the oven at 425 degrees for 25 minutes. In the last 5 minutes of cooking, sprinkle chopped pecans across the sheet pan and continue to bake for remaining 5 minutes.
