- Whisk all of the dressing ingredients in a small bowl, or shake them up in a small mason jar.
- Rinse kale, romaine, apple and avocado before chopping.
- De-stem the kale (cut it away from the woody stems), and chop. Chopped romaine lettuce for salad.
- Add the sliced apple, grated cheese, and top with avocado.
- Toss salad with the dressing until everything is well combined.
- Season to taste with salt and pepper.

- Place your fruit of choice evenly around the bottom of the pan. For fruit like blueberries, blackberries, raspberries, and cherries just rinse and dry the fruit. For fruit like pears, apples, and plums, you will want to wash, core, and slice the fruit, and peel if you prefer.
- In a large bowl mix the milk, eggs, vanilla, sugar, and flour together. Then pour evenly over fruit and crust.
- Bake in the oven at 375 degrees for 35 to 40 minutes or until an inserted fork comes out clean.

Cranberry Salsa
- 2 cups frozen cranberries
- 1/2 apple seeded and chopped
- 1 jalapeno seeded and chopped
- 1 tablespoon sugar
- 2 tablespoons ginger peeled and chopped
- 2 tablespoons cilantro
- 1 tablespoon lemon juice
Tacos
- 1 pound lean ground turkey (97/3)
- 1/2 cup low fat shredded Monterey Jack cheese
- 2 cups lettuce shredded
- 1 bunch cilantro for garnish
- 8 corn tortillas

- Clean your area and wash your hands before you begin.
- Add frozen cranberries, apple, jalapeno, sugar, ginger, cilantro, and lemon juice to a skillet on medium heat and allow ingredients to cook together.
- Either use an immersion blender to blend salsa together in the pan or transfer the ingredients to a blender and blend until desired consistency.
- Next, brown the ground turkey in a skillet until it reaches 165 ยฐF.
- Place ground turkey and the taco toppings (cheese, lettuce, and cilantro) in separate bowls for assembly.
- On a corn tortilla place the turkey, then lettuce, then cranberry salsa, then cheese.

Ingredients
- 2 lb cauliflower florets
- 1/2 lb red grapes halved
- 1 tbsp minced garlic
- 2 tsp rosemary (fresh or dried) chopped
- 1/4 cup olive oil
- 1/3 cup pecans chopped

- Cut cauliflower into florets and place in large bowl.
- Slice grapes and place them in the bowl with the cauliflower.
- Mince garlic and chop rosemary and add to bowl with the grapes and cauliflower.
- Pour olive oil over cauliflower mixture.
- Toss well. Spread cauliflower mixture onto a foil lined baking sheet, add a small pinch of salt and pepper, place in the oven at 425 degrees for 25 minutes. In the last 5 minutes of cooking, sprinkle chopped pecans across the sheet pan and continue to bake for remaining 5 minutes.
