Ingredients
  • 2 Tbsp Avocado Oil
  • 1 Tbsp garlic Minced
  • 1/4 Cup onion Diced
  • 1/2 Cup carrot Diced
  • 2 Stalks celery Diced
  • 2 Tbsp tomato paste
  • 1/4 Cup tomato sauce no salt added
  • 1 1/4 Cup Brown dry lentils
  • 14.5 Oz Canned Potatoes Drained
  • 2 Cups water
  • 2 Cups low sodium chicken broth no sugar added option
  • 1/2 Tsp black pepper
  • 1/2 Tsp dried oregano
  • 1 Tsp cumin
  • 3 Cups baby spinach leaves

Instructions
  1. In a large pot, add avocado oil. Add in the garlic, diced onion, diced carrot, and diced celery. Cook for 2-3 minutes until carrots and celery are soft, stirring frequently.
  2. Add tomato paste, tomato sauce, and lentils to the pot and combine with the carrot and celery mixture. Cook for 1 minute.
  3. Add canned potatoes to the pot.
  4. Pour in 2 cups water and 2 cups chicken broth.
  5. Add in black pepper, oregano and cumin. Stir to combine, cover, and bring to a boil.
  6. Reduce heat to medium low and simmer for 25 minutes until lentils are cooked.
  7. With a handheld emulsion blender, briefly emulsify about ¼ of the soup in the pot while leaving the texture chunky. If using a regular blender, remove ¼ of the soup and add the blender. Blend until smooth and place back in the pot.
  8. Stir in spinach leaves into the soup and let simmer for 5 more minutes or until spinach is wilted.

Ingredients
  • olive oil spray
  • 4 slices low sodium turkey bacon
  • 1 cup yellow onion diced
  • 1/2 cup carrot diced
  • 1/2 cup celery diced
  • 2 cups russet potato with skin, diced
  • 1 Tablespoon dried thyme
  • 4 cups Low Sodium Vegetable Broth
  • 1 cup zucchini with skin, diced
  • 1 cup yellow squash with skin, diced
  • 2 cups unsalted sweet yellow corn drained
  • 1 cup whole milk
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 1 Tablespoon parsley minced for garnish

  1. Lightly coat the bottom of a pot with olive oil spray.
  2. Add the turkey bacon and cook until crispy. Remove the bacon from the pan and drain on a paper towel. Once the bacon has cooled, coarsely chop, and set aside.
  3. Add the onion, carrots, celery, and salt to the pot. Stir occasionally until vegetables are tender.
  4. Add potatoes, thyme, and broth to the pot. Stir and cover. Bring to a slight boil, then let simmer for about 8 minutes or until the potatoes are partly tender.
  5. Add in the zucchini, corn, and remaining salt and pepper. Continue to simmer for 8 to 10 minutes or until all vegetables are fork-tender.
  6. Transfer two cups of the soup into a blender or food processor. Puree until smooth. Stir the mixture back into the pot.
  7. Add the bacon and milk. Simmer until just heated through.
  8. Garnish with minced fresh parsley.

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 medium head cauliflower riced
  • 1/3 cup carrot diced
  • 1/3 cup asparagus cut into 1/2 inch sections
  • 1/4 cup green peas
  • 1/2 cup onion chopped
  • 1 large egg
  • 1 pound chicken breast cooked
  • 3 green onions sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

  1. Start with a clean prep area and wash hands
  2. If not already done, rice the cauliflower and chop vegetables.
  3. In a large pan, add olive oil and heat on medium.
  4. Add cauliflower, carrots, green peas, asparagus, and onions.
  5. Stir and allow to cook until the vegetables start to soften, about 5 minutes.
  6. Create a hole in the middle of the cauliflower mixture and add the egg. Scramble the egg in the pan and stir it together with the vegetables.
  7. Once egg is cooked in, stir in cooked chicken.
  8. Stir in soy sauce, sesame oil, and green onions.
  9. Serve warm and enjoy!

Ingredients
  • 2 6 ounce cans low-sodium or no-salt-added tuna in water drained, flaked
  • 1 6 ounce package low-sodium stuffing mix for chicken
  • 1 cup reduced fat cheddar cheese shredded
  • 1 cup water
  • 1 carrot shredded
  • 1/3 cup reduced fat mayonnaise
  • 2 tablespoons sweet pickle relish

  1. Mix all ingredients. Refrigerate for 10 minutes.
  2. Heat a large nonstick skillet sprayed with cooking spray on medium heat.
  3. Use ice-cream scoop to add 1/3 cup portions of tuna mixture, in batches, to skillet. Flatten into patties with back of spatula.
  4. Cook 6 minutes or until golden brown on both sides, carefully turning patties over after 3 minutes.

Ingredients
  • 3 tbsp reduced sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
  • 1 clove garlic minced
  • 1 tsp granulated white sugar
  • 1/2 tsp ground black pepper
  • 3/4 lb lean beef top sirloin thinly sliced
  • 1 carrot chopped
  • 1 green onion chopped
  • 1/2 yellow onion chopped

  1. In a large re-sealable plastic bag, combine soy sauce, sesame oil, sesame seeds, garlic, sugar, and black pepper.
  2. Place beef, carrots, and onions in the bag; seal, and shake to coat the vegetables and beef with the sauce.
  3. Refrigerate for at least 2 1/2 hours.
  4. Preheat an outdoor grill or stove top on high heat.
  5. Remove meat and vegetables from marinade and place in a large skillet.
  6. Place a few tablespoons of the marinade in the skillet with the meat and vegetables.
  7. Cook for 15 to 20 minutes, or to desired doneness for meat.
