Chicken Salad Pita with Yogurt Sauce
A Chicken Salad Pita with Yogurt Sauce will make a healthy and delicious lunch or dinner option. This will be a refreshing addition to your other recipes!
Ingredients
- 1/2 cup red grapes halved if large
- 1 1/2 cups cooked chicken breast skinless, diced
- 1 celery stalk, chopped
- 2 1/2 tablespoons plain nonfat Greek yogurt
- 2 tablespoons reduced fat mayonnaise with olive oil
- 1/8 teaspoon chili powder
- 1/8 teaspoon curry powder
- 1/8 teaspoon salt
- 1/4 teaspoon ground pepper
- 2 each 100% whole wheat pita pockets cut in half
- 4 pieces leaf lettuce
- 1 tablespoon sliced almonds

- Clean your area and wash your hands before you begin.
- Combine grapes, chicken breast, celery in a large bowl. Set aside.
- In another bowl, combine yogurt, mayonnaise, chili powder, curry powder salt and pepper.
- Mix yogurt sauce with chicken mixture and add almonds. Place 1/2 cup salad in each pita pocket with 1 piece leaf lettuce.

Roasted Cauliflower and Grapes
This unexpected combination of a fruit and a vegetable makes for a delicious side dish! The grapes in this dish are a great way to get antioxidants and fiber in your diet.
Ingredients
- 2 lb cauliflower florets
- 1/2 lb red grapes halved
- 1 tbsp minced garlic
- 2 tsp rosemary (fresh or dried) chopped
- 1/4 cup olive oil
- 1/3 cup pecans chopped

- Cut cauliflower into florets and place in large bowl.
- Slice grapes and place them in the bowl with the cauliflower.
- Mince garlic and chop rosemary and add to bowl with the grapes and cauliflower.
- Pour olive oil over cauliflower mixture.
- Toss well. Spread cauliflower mixture onto a foil lined baking sheet, add a small pinch of salt and pepper, place in the oven at 425 degrees for 25 minutes. In the last 5 minutes of cooking, sprinkle chopped pecans across the sheet pan and continue to bake for remaining 5 minutes.
